Human Diet written by Peter S. Ungar and has been published by Bloomsbury Publishing USA this book supported file pdf, txt, epub, kindle and other format this book has been release on 2002-03-30 with Social Science categories.

Diet is key to understanding the past, present, and future of our species. Much of human evolutionary success can be attributed to our ability to consume a wide range of foods. On the other hand, recent changes in the types of foods we eat may lie at the root of many of the health problems we face today. To deal with these problems, we must understand the evolution of the human diet. Studies of traditional peoples, non-human primates, human fossil and archaeological remains, nutritional chemistry, and evolutionary medicine, to name just a few, all contribute to our understanding of the evolution of the human diet. Still, as analyses become more specialized, researchers become more narrowly focused and isolated. This volume attempts to bring together authors schooled in a variety of academic disciplines so that we might begin to build a more cohesive view of the evolution of the human diet. The book demonstrates how past diets are reconstructed using both direct analogies with living traditional peoples and non-human primates, and studies of the bones and teeth of fossils. An understanding of our ancestral diets reveals how health relates to nutrition, and conclusions can be drawn as to how we may alter our current diets to further our health.

Abstract: The evolution of basic nutrition concepts, from Greco-Roman times to the present, is examined for professional nutritionists, and those interested in the history of civilization. Biographical sketches are presented of some of the great contributors to scientific nutrition knowledge, including Aristotle, Galen, Lavoisier, Mendel, and Funk (who first propounded the theory of "vitamines"); their observations and experiments form the basis for chronologically tracing advances in nutrition research. The history is divided into 2 areas of knowledge; the first section focuses on the concepts of nourishment and energy--the transformation and assimilation of food by the body, innate body heat, the functions of metabolism and respiration, etc. The second section discusses the growth of knowledge about nutritional diseases, including scurvy, beriberi, xerophthalmia, endemic goiter and anemia. The issues treated in this publication are brought together in this way for the first time. For many of the chronic diseases, familial predispositions are well established, and there is good evidence for true genetic predisposition. When Homo erectus emerged 1.7 million years ago, humans existed as non-cereal-eating hunter-gatherers. It is on this basis that, according to the hypothesis of the 'carnivore connection', an insulin-resistant genotype evolved to provide survival and reproductive advantages to populations adapted to a high meat, low plant food (low carbohydrate) nutritional environment. Cereal became the major source of calories and protein in the human diet only about 10,000 years ago. Humankind has thus had little evolutionary experience to adapt to this new food type, maladaption being the consequence. Moreover, studies comparing energy expenditure in Western societies and during the Paleolithic period indicate a low level of physical activity not previously encountered in human history, a state to which humans are not genetically adapted. Together with the dietary changes, this has led to a modern environment in which a number of individuals are prone to chronic diseases, causing increases in non-insulin-dependent diabetes mellitus, hypertension, coronary artery disease, cancer and obesity. As a consequence, the lifestyle approach for the prevention and management of these diseases is essential, varying with national dietary patterns and national economy. This publication will be of special interest to physicians, geneticists, nutritionists, dieticians, anthropologists, food technologists, food-policy-makers and individuals interested in personal and family health.

How do we evolve our legacy of eating? How do we make better choices to create a better legacy for our children? How did America¿s health care arrive in the state of crisis that we are in today and how do we eat our way out? One should not need a degree in chemistry, biology, nutrition nor medicine to comprehend what they should be eating. We need simple, layman¿s terms and logic of what to eat and why. Each of us is in a state of continual transformation and Evolve will challenge your legacy of nutrition, your concepts of prevention and provide a simplistic framework for the evolution of your eating. We each make one choice at a time and with each choice, we choose our path of evolution. In this awakening, thoroughly researched and well-reasoned book, the author considers the nutritional choices that we make through personal stories, lessons learned in history, and factual data. Bringing the larger topic of the health care crisis to a personal level, the author conveys perspectives and potential solutions to the oversaturation of medication, the undernourishment of Americans, the proliferation of disease and the evolution of our health. The reader will not only feel thoroughly engaged, but also will be inspired to eat better and to leave a healthier legacy for their children and the world around them.
