"Canola is a major oilseed crop contributing up to 96% of the total oilseed production in Australia. Oil extraction leaves a protein-rich meal that is currently mainly used as animal feed. However, the meal may be a valuable alternative protein source for human consumption. This research investigated the feasibility of using canola meal as a raw material for the extraction of protein for human food use. This included a study of protein extraction processes, extracted protein characteristics, and technological functionalities of the protein extracts. Canola and non-canola grade meals were used to prepare albumin, globulin, glutelin, and prolamin fractions according to the Osborne (OSB) method, based on their solubility in water, 5% NaCl, 0.1 M NaOH, and 70% ethanol sequentially. These extracts were then compared to the canola protein isolate (CPI) obtained by the direct alkaline (DIR) extraction method in terms of protein yield, recovery, and characteristics of the extracts such as electrophoretic profile, and residual antinutritional components ..."--Abstract.
