For many years eggs have been purchased by number without regard to quality. This has been decidedly unfair to the farmers and other producers who have taken pains to market good. Clean. Fresh eggs, and through placing no premium on good eggs the system referred to has really become an incentive to the continu ance of careless and dilatory methods. It has made possible the disposal of eggs in all stages of decomposition. And has encouraged farmers and local buyers to hold eggs at certain seasons of the year when they have no satisfactory places for storing them. This whole subject has been thoroughly discussed at recent meetings of produce dealers. Of the Provinces of Ontario and Quebec. Officials from both the Federal and Ontario Departments of Agriculture were present at these meetings, and endeavoured strongly to present the imperative need of a radical change in the system of handling and marketing eggs. Excerpt from Agricultural College Extension Service Bulletin, Vol. 12: Care of Eggs for Market The production of eggs for market is becoming of greater importance in Ohio every year, both as a source of revenue and as a source of the national food supply. The demand for eggs is rapidly increasing. This increased demand is due largely to an increase in the consuming population. It is also due in part to an increase in the per capita consumption of eggs caused by a growing appreciation of their value as food and a more general substitution of eggs for meats on account of the increased price of the latter. Increased demand for eggs has been accompanied by an increase in their cost to the consumer and a demand on the part of the consumer for a product of higher quality. This demand for higher quality, together with the requirements of the pure food laws of the State and Federal governments, has made it necessary for the poultryman to study carefully the factors which determine the market value of eggs, to produce eggs of better quality and to handle them with better care, in order that they may reach the consumer with a minimum of deterioration and loss. Improvement in the quality of market eggs and the care with which they are handled is as important to the producer as is increased production. The production of eggs of better quality and the introduction of better methods of handing will eliminate the enormous loss in price because of the poor quality of a large number of the eggs marketed; it will eliminate the loss in transportation charges on worthless eggs; it will make unnecessary the large arm of graders, and candlers now required to sort the good from the bad and prepare them for market; and it will increase consumption, because of the elimination of doubtful eggs. For this reason where Leghorns are kept recourse must be had to incubators or to hens of sitting breeds to hatch the chicks. Leghorns are active, good foragers, and with good care the pullets will begin to lay at five months of age. The larger breeds are usually a month longer in beginning to lay. Large breeds, such as Brahmas, Cochins, and Langshans, should not be kept for egg production. These are chiefly used where the market demands a large chicken for table purposes. In most markets, however, smaller fowls find more ready sale. The Brahmas and Cochins have meat of excellent quality, and being of a quiet disposition are fitted for the economical pro duction of meat. Excerpt from Production and Marketing Costs and Margins for Poultry and Eggs For many years, the variations in returns received by poultry and egg producers mainly reflected year-to-year changes in output and its impact on prices. Production costs varied somewhat due to; small changes in feed ingredient prices, production efficiency, and use of capacity. Marketing margins were declining to stable, tending to reflect fairly constant spreads back from wholesale levels toward the producer. With feed ingredient prices showing much wider swings in recent years, and with prices of other inputs rising, the need to keep abreast of data on production costs and returns and marketing costs and margins has become more pressing. The Economic Research Service, in cooperation with the Georgia, Missouri, and Pennsylvania agricultural experiment stations, is conducting a program of research to develop better continuing measurements of production and marketing costs. This article is based on some inputs from that program as well as on other recent studies. Figures presented are preliminary and more indicative of relative changes than of precise levels.
