This book focuses on food policy, and its relationship to public health, as an increasingly important issue in today’s society. Contributors highlight the lack of global regulation in the food supply chain and explore the common tendency to leave regulation to markets and to individual consumer decisions. In a period where there is growing concern about the sustainability of contemporary food systems, this book considers the inadequate response made to issues of food waste where solutions in high income countries are dependent on lifestyle and consumer behaviour. It offers an insight in to the importance of people’s everyday lives in relation to policies on public health, food and sustainability. The text demonstrates the corrosive impact of social inequality, and the futility of identifying lower income consumers as flawed when aiming for food policies that seek to achieve improvements in public health. Factors such as technological developments, ecological concerns and international trade are also taken in to account. This book was originally published as a special issue of Critical Public Health.

Due to industrialization, globalization, and digitalization food-related life is becoming increasingly complex. The abundance of (unhealthy) food, in particular, is causing an unprecedented over-consumption that endangers people’s health, quality of life, productivity, and life expectancy. Against this backdrop, Florentine Frentz deals with the food well-being of modern consumers and how it can be strengthened. To this end, she refines the concept of food well-being and creates an overarching model, which she applies to various studies and various phenomena. Based on her results, she expounds implications for researchers, retailers, manufacturers, marketers, public policy makers, and consumers. Overall, the results show that the paradigm shift that has already begun must be vigorously pursued, and that every stakeholder can and should contribute. About the Author:Florentine Frentz did her dissertation at the Chair of Marketing and Retailing at the University of Siegen, Germany.

Pleasure plays a significant but often neglected role in the creation of consumer wellbeing and the relationship between the food consumption experience and healthy eating. This innovative collection focusses on the experiential and hedonic aspects of food and the sociocultural, economic, ideological, and symbolic factors that influence how pleasure can contribute to consumer health, food education, and individual and societal wellbeing. Food and Experiential Marketing uses a holistic perspective to explore how the experiential side of food pleasure may drive healthy eating behaviors in varied food cultures. It questions: Is food pleasure an ally or an enemy of developing and adopting healthy eating habits? Can we design healthy offline and online food experiences that are pleasurable? What are the features of food consumption experiences, and how do they contribute to consumer wellbeing? Providing an overview of experiential and cultural issues in food marketing, this book will be invaluable for consumer behavior and food marketing scholars, public policy professionals, and the food industry in understanding the importance of pleasure in promoting healthy eating behaviors.

Changing Consumer Behavior In Diet And Health A Case Study On Local Matters written by Ann Shirley Hu and has been published by this book supported file pdf, txt, epub, kindle and other format this book has been release on 2010 with categories.

Abstract: For the first time in two centuries, the life expectancy of children is less than that of their parents due to food related health problems (Belluck, 2005). According to WebMD, "One in three American children born in 2000 will develop diabetes if they adopt the nation's inactive and overeating lifestyle. ... For Hispanic children ... about one in two will develop the disease" (2003). To combat diabetes and obesity and to improve national health, many children will need to change their consumer decision-making processes regarding food. Instilling healthy food habits and values through early education may be the key to these improvements. In Columbus, Ohio, non-profit organization Local Matters aims to bring about healthier eating habits by educating young children about food. Local Matters' Food is Elementary program at Indianola K8 Informal actively addresses the obesity epidemic. The program teaches children in grades K-1 the importance of healthy food. Besides dietary health information, the curriculum tries to instill an emotional association between healthy food and happiness through sensory and social activities. Smelling, touching, cooking, and eating food creations are incorporated with socializing with classmates. My fourteen-minute documentary portrays Local Matters' efforts in developing healthful consumer behavior at a young age. With my camera, I documented and observed Local Matters' operations, cooking lessons, challenges, as well as the children's participation and reactions, and parental responses. Based on interviews with children, parents, and Local Matters, I analyzed the program and assessed its effects. Showcasing my documentary at the OSU Denman Research Forum and the 2011 Association for Consumer Behavior Film Competition will raise awareness of children's health and the anticipated benefits of teaching programs such as Food is Elementary.
