En México desde tiempos prehispánicos se ha utilizado el amaranto como fuente de nutrientes para la alimentación humana. En la República Mexicana, se cultivan dos especies: Amaranthus hypochondriacus y Amaranthus cruentus en menor grado; estad os especies son muy semejantes entre sí: son anuales, con hojas y hábitos de ramificación similares, erectas y altas. La diferencias de color de plantas y semillas son de poco valor taxonómico, ya que cada especie presenta formas de semilla oscura y pálida, y el color de la planta varía de rojo intenso a verde brillante. El cultivo del amaranto tiene características agronómicas deseables tales como: alta rusticidad, amplitud de adaptación a diferentes climas, suelos, tempreratura, bajos requerimientos de humedad, y sobretodo un alto valor nutricional, lo que lo hace como una posibilidad de cultivo potencial para zonas de temporal, y como portador de nutrientes para los sectores más desprotegidos del país.
