She gives the greatest financial re turns from the feeds grown on the farm, and there fore enables the owner to get the necessary added returns from his high-priced land. Still easier is it to see why the dairy cow has supplanted the meat-bearing animals where land has become im poverished. Here she enables the farmer to get the greatest financial returns from what little his land does produce and at the same time returns to the soil practically all the plant food taken out by the feed she eats. One of the favorable economic features of the dairy business is the regularity and dependability of the returns. This appeals particularlv to the small farmer of limited means to whom security of returns is of more moment than the volume of profits. Excerpt from Dairy Farming: Being the Theory, Practice, and Methods of Dairying Far more than any other breed, because the grandest and most fashionable, Shorthorns have become cosmopolitan. They are now found in every civilised portion of the world, and in some portions which can hardly be regarded as civilised. The Shorthorn seems to be the Englishman's shadow - it follows him everywhere. In all countries, if properly cared for, Shorthorns are found to do well. Other breeds, notably the Herefords, have been introduced and extensively bred in other countries, and they too are found to prosper, without such minute care, under the new conditions; while their distinguishing characteristics, being to all intents and purposes stamped with the principle of permanence, so far as such matters can become permanent, do not change in any marked degree. Yet it is probable that foreign soils and climates will modify them somewhat in course of time. Not the least of the merits which English breeds of cattle carry with them to foreign countries is their prepotency - their ability to stamp in a marked manner their own qualities on the offspring of any of the native breeds With which they are intercrossed in such foreign countries; and in this way they are modifying the cattle of the rest of the world in a degree analogous to that in which Englishmen are modifying its manners and institutions. My aim has been to make a practically useful book. With this view, I have treated of the several breeds of stock, the diseases to which they are subject, the established principles of breeding, the feeding and management of milch cows, the raising of calves intended for the dairy, and the culture of grasses and plants to be used as fodder. For the chapter on the diseases of stock, I am largely indebted to Dr. C. M. Wood, Professor of the Theory and Practice of Veterinary Medicine, and to Dr. Geo. H. Dadd, Professor of Anatomy and Physiology, both of the Boston Veterinary Institute. If this chapter contributes anything to promote a more humane and judicious treatment of cattle when suffering from dis ease, I shall feel amply repaid for the labor bestowed upon the whole work. The chapter on the Dutch dairy, which I have trans lated from the German, will be found to be of great practical value, as suggesting much that is applicable to our American dairies.
