Nel secondo millennio d.C. Nepero impiegò venti anni per la scoperta dei logaritmi e rese possibile il progresso scientifico, rimasto bloccato da difficoltà computazionali. Dopo di lui tutto fu più semplice, e la scienza, liberata dai laccioli dell’ignoranza, in soli cinquecento anni compì incredibili progressi. Il sapere, che fino a poche decine di anni fa era riservato a pochi, ora è disponibile con un clic nelle case di tutti. Tra gli artefici di questo progresso nomi illustri e sconosciuti. Tutti hanno contribuito a questo progresso e non vanno dimenticati. Giuseppe Di Cataldo è nato a Catania (1948). Dopo gli studi classici ha frequentato il Biennio Propedeutico di Ingegneria a Catania. Ha completato gli studi presso il Politecnico di Milano, dove si è laureato nel 1972 in Ingegneria elettronica. La sua attività professionale si è svolta prevalentemente all’interno dell’Università degli Studi di Catania, iniziando nella giovane facoltà di Ingegneria prima come assistente ordinario, poi come professore associato e infine quale professore ordinario di Elettronica. La carriera universitaria lunga quarantasei anni si è conclusa nel 2018. È stato il fondatore del gruppo di ricerca di elettronica e microelettronica dell’Università di Catania e la sua produzione scientifica ha riguardato i circuiti discreti, i circuiti integrati e le loro applicazioni. Da quarant’anni si dedica alla vela, la sua grande passione, e dal 2019 è Presidente della Sezione di Catania della Lega Navale Italiana.

It is well established that certain strains of yeasts are suitable for transforming grape sugars into alcohol, while other yeast strains are not suitable for grape fermentations. Recent progress has clearly demonstrated that the sensory profile of a wine is characteristic of each vine cultivated, and the quality and technological characteristics of the final product varies considerably due to the strains which have performed and/or dominated the fermentation process. Because of their technological properties, wine yeast strains differ significantly in their fermentation performance and in their contribution to the final bouquet and quality of wine, such as useful enzymatic activities and production of secondary compounds related both to wine organoleptic quality and human health. The wine industry is greatly interested in wine yeast strains with a range of specialized properties, but as the expression of these properties differs with the type and style of wine to be made, the actual trend is in the use of selected strains, which are more appropriate to optimize grape quality. Additionally, wine quality can be influenced by the potential growth and activity of undesirable yeast species, considered spoilage yeasts, which cause sluggish and stuck fermentation and detrimental taste and aroma in the wine.
