En este libro se presenta el tomo VII: Turismo gastronómico: experiencias y análisis. Esta publicación incluye estudios sobre potencialidades, rutas y proyectos, experiencias de recuperación de alimentos y preparaciones, así como una apuesta teórica para el abordaje del tema. Actúalmente, el tema gastronómico se posiciona con más fuerza en el turismo, ya que los alimentos han cobrado mayor relevancia como carácter distintivo de los territorios y como motivador de viajes. Esto convoca simultáneamente a que el carácter diferenciador de las cocinas tradicionales imprimen un sello de valor agregado en los destinos, y para esto la recuperación de alimentos y preparaciones, creación de proyectos, ferias y clúster gastronómicos cumplen un papel fundamental. Dado que en muchos casos las cocinas tradicionales han sido relegadas de las mesas a manteles y eventos por considerarse populares, la articulación de la investigación en la planificación y la transformación de esos procesos tradicionales hacia la mesa del turista debe hacerse teniendo en consideración el valor cultural y ancestral que conlleva y, por tanto, debe ser presentado como parte del patrimonio y como una alternativa disponible para el foráneo, pero sobre todo como una forma de fomentar el consumo de los alimentos y las preparaciones locales.
