Esta tesis muestra la aplicacion de Experimentos Exploratorios (Disenos Factorial Fraccionado) para la determinacion de variables criticas asi como la Metodologia de Superficie de Respuesta para determinar los rangos de operacion de las variables que permitieron reducir la variabilidad del proceso. Finalmente se muestra la construccion de un modelo de prediccion de datos para las variables respuestas de interes asi como los resultados y beneficios obtenidos en terminos de capacidad de procesos (Indices Cp y Cpk)."

Por este motivo se considera un soporte necesario, el evaluar de forma cuantitativa y reproducible una las características de la calidad y favoritismo de un producto como los son sus propiedades sensoriales mecánicas, siendo necesario la implementación de métodos de control para asegurar el proceso y usar como apoyo en el desarrollo de nuevos productos Este trabajo muestra algunas de las aplicaciones que se pueden obtener del equipo universal de ensayos EZ-S, las cuales no solo fueron enfocadas a pruebas rápidas y precisas sino que también muestran claramente datos cuantitativos de propiedades sensoriales mecánicas que a la fecha solo era posible estimar de forma cualitativa. Así pues a continuación se muestran los resultados obtenidos para el diseño y proceso de estandarización de las metodologías creadas para el análisis de textura en aireados, dureza de blandos y crocancia de productos grajeados.
