The Garland Handbook of Latin American Music is comprised of essays from The Garland Encyclopedia of World Music: Volume 2, South America, Mexico, Central America, and the Carribean, (1998). Maria Descarrega Garcia va nàixer a la Fatarella, comarca de la Terra Alta, el 9 d'abril de 1931. Sons pares, Josep i Guadalupe, formaven una família pagesa coneguda especialment per la seva capacitat de treball. Entre altres activitats, Josep de Carinyo va desermar i posar en producció una finca en la qual destacava una gran extensió d'oliveres. L'inici de la guerra va malbaratar totes les previsions. Josep de Carinyo va ser assassinat en el decurs dels Fets de la Fatarella, mentre que Guadalupe moria posteriorment víctima de l'explosió d'una bomba. Òrfena de pare i mare, als onze anys, Maria va aferrar-se a la terra que sons pares li van deixar i va continuar amb la tradició familiar pagesa. Més endavant, va casar-se amb Andreu de cal Garrit, de professió paleta, i plegats van tenir quatre fills. Ni la feina de la casa, ni els quatre fills, ni l'empresa de construcció van ser obstacle suficient perquè deixés d'anar al camp. Enmig d'aquestes circumstàncies, és fàcil d'entendre que la seva cuina tingués una forta arrel camperola. Cuinava de forma pràctica, ajudada per tot allò de què disposava en el seu assortit rebost, a més dels productes que obtenia de l'hortet familiar i els animals que criava al corral. Va morir el dia 6 de febrer de 2003. A partir d'aleshores, el seu fill Josep va recopilar les seves receptes més casolanes.
