El foie gras es un alimento muy preciado, pero no solo en la actualidad. Los egipcios ya lo descubrieron hace más de 4.000 años y con el paso del tiempo se ha ido tecnificando su forma de producción, pero la alimentación forzada sigue siendo la técnica tradicional por excelencia. Desde hace unos años la conciencia social sobre el bienestar de los animales ha ido en aumento y se han llevado a cabo alternativas en muchos tipos de producción y consumo. En el caso del foie gras también se han encontrado otros tipos de producción interesantes pero que aún no están del todo implementados. La pregunta es: ¿por qué? La presente obra repasa la legislación actual nacional e internacional referente al amparo de estos animales, teniendo en cuenta estudios científicos que avalan la alimentación forzada como un sistema que no tiene en cuenta la salud o el bienestar de los animales.
