A traves de mas de 120 entrevistas, y mas de 90 panaderias a lo largo de Chile y el rescate historico y fotografico de este oficio, se rinde un homenaje a los protagonistas que han aportado desde siempre de forma anonima a la maravillosa historia de una de nuestras industrias mas tradicionales. Este libro muestra la intimidad de las panaderias, el comienzo de la produccion del pan en Chile y sus anecdotas de reparto, leyes que han regulado la industria, sus hornos, la tecnologia que poco a poco fue cambiando su forma de produccion, los molinos de harina, las dificultades y grandes aportes del rubro, desde el siglo XIX a la fecha. Hace tambien un recorrido a los distintos tipos de pan que han sido parte de las vidas de todos los chilenos, como son la marraqueta, la hallulla y los panes campesinos: churrascas, tortilla de rescoldo, pan amasado y el pan de Chiloe. Y tambien, aquella increible magia que se produce entre la preparacion de la masa y el pan horneado que llega a los paladares de todos nosotros. No podia quedar afuera el aporte de la inmigracion espanola en el crecimiento y desarrollo de esta industria, sus vidas, sus esfuerzos y ancestros, asi como tampoco los trabajadores y gremios que han luchado incansablemente por mantener viva esta profesion. A lo largo del libro, ademas se podran conocer la vida y anecdotas de 30 personajes del Pan en Chile, desde duenos historicos de panaderias emblematicas, panaderos y artesanos que han dedicado su vida a mantener viva la tradicion de las panaderias de barrio, los canastos de pan, los panos de osnaburgo, el reparto del pan a las casas, el horno chileno y los panes campesinos, entre otros. Historiadores, chef y criticos gastronomicos tambien se unen en este trabajo para completar el homenaje y rescate patrimonial que el libro El Pan en Chile busca plasmar en sus paginas, dejando un legado unico y mas que merecido a todos aquellas personas que de una u otra manera han marcado, sin duda, la historia de nuestro pais y hecho posible que el pan siga llegando caliente y fresco a la mesa de los chilenos.
