Ce livre fait suite à un premier tome qui présentait la thermodynamique limitée à ses applications découlant de l’acceptation de son « premier principe ». Dans tous les domaines de la physique et de la chimie nous constatons que parmi toutes les évolutions envisageables garantissant la conservation de l’énergie, certaines sont possibles et d’autres ne le sont pas : le concept d’énergie est insuffisant pour rendre compte de l’évolution des systèmes réels. Nous constatons que toutes les transformations réelles concernant des systèmes macroscopiques sont fondamentalement irréversibles. Il nous faut rendre compte de cela : la « flèche du temps » est une réalité. Ce deuxième tome a pour maître mot « l’entropie », fonction d’état introduite par le second principe de la thermodynamique dans l’intention de quantifier cette irréversibilité. Un premier chapitre d’application est consacré aux changements d’états des corps purs, suivi d’un chapitre présentant une étude simplifiée des machines thermiques. Enfin, dans le but de donner de l’entropie une image plus concrète, un dernier chapitre est consacré à une description microscopique des gaz. L’indiscernabilité des particules dans un gaz permet de résoudre le paradoxe de Gibbs, à savoir que le modèle canonique et la mécanique classique du reste, donnent une entropie non parfaitement extensive. Par contre, elle rend impossible la factorisation de la fonction de partition ; on contourne le problème en se rabattant sur une factorisation par niveau d’énergie et non plus par particule. Cerise sur le gâteau elle rend le calcul d’occupation des niveaux bien plus simple. Malheureusement, ce type de factorisation est incompatible avec un nombre fixé de particules et l’on doit introduire le modèle grand-canonique où le système échange des particules avec un réservoir. Selon qu’un niveau d’énergie peut contenir une particule ou plus ou bien un nombre quelconque, on a affaire à un gaz de Fermi-Dirac ou de Bose-Einstein et l’on étudiera le comportement étrange de ces deux types de gaz à basse température. Le gaz de photons est un cas un peu particulier ; il permet d’utiliser la factorisation par niveau d’énergie en restant dans le modèle canonique, ce qui nous conduira une étude très approfondie. Par analogie, on traitera le cas des semi-conducteurs en considérant que les électrons libres forment un gaz contenu dans le réseau cristallin. On expliquera les choses essentiellement par une méthode graphique bien plus efficace que de longs calculs. Bonne lecture.
