Il vino è, generalmente, oggetto di manuali tecnici e di guide alla degustazione. È invece raro che costituisca la prospettiva lungo la quale interpretare i pensieri e le azioni degli esseri umani, le necessità dei loro corpi, delle anime e delle menti. La riscoperta dei contenuti sentimentali, emozionali e intellettuali - ossia “spirituali” - del bere e del vivere è l’obiettivo che Angelo Peretti propone al lettore attraverso novanta brevi “esercizi” mentali, tra narrativa e saggistica. Con una logica stringente e un’ironia dissacrante, l’autore aiuta a riconoscere e sfatare i luoghi comuni che si sono stratificati a tal punto da inibire il godimento libero, immediato e spontaneo del vino e della stessa vita. In particolare, le regole da iniziati e le pose ostentate da quei sedicenti intenditori, che si ergono a sacerdoti dell’enologia, vengono smantellate una ad una, restituendo al bevitore il piacere di un gesto naturale come il condividere un bicchiere di vino con le persone care. Per accompagnare indistintamente il neofita e l’esperto a riappropriarsi della dimensione genuina del bere, ci sono novanta “esercizi che prendono spunto da altro” rispetto al vino: romanzi, aneddoti, poesie, canzoni, interviste; si parla d’altro per parlare di vino e viceversa. Inoltre, per chi volesse approfondire le proprie “esercitazioni” attraverso il calice, Peretti suggerisce, per ciascun capitolo, due vini, uno italiano e uno estero, coerenti con il contenuto narrato: la scelta si ripartisce fra etichette note e bottiglie meno conosciute, per un totale di centottanta vini. Angelo Peretti (Garda, 1959) si occupa di vino come giornalista e critico da più di trent’anni. Dirige il giornale on line The Internet Gourmet. Ha collaborato con guide italiane di settore, ha redatto piani strategici per consorzi di tutela e ha pubblicato manuali sui vini italiani e sugli abbinamenti tra cibo e vino, tra cui Vini e spumanti. Sindbad era lo pseudonimo sotto il quale si celava il narratore ungherese Gyula Krúdy, dandy tenebroso, personaggio leggendario della bohème letteraria di Budapest del primo Novecento, celebre autore di numerose novelle e romanzi. Márai lo considerava suo maestro, e lo amò a tal punto che non solo gli dedicò un gran numero di scritti e citazioni sparse, ma ne fece anche il protagonista di questo libro. Dove, in una mattina di maggio, Sindbad esce dalla sua abitazione nel sobborgo di Óbuda con l'intenzione, una volta tanto, di tornare presto e provvisto di denaro e regali per la figlia e la moglie, la donna che «aveva portato nella vita di Sindbad, che stava diventando vecchio, tutto ciò che per cinquantacinque anni il marinaio aveva cercato invano negli ambienti dei caffè, delle stanze riservate ai giocatori di carte, delle bettole impregnate dell'odore di salnitro». Ma dopo aver ceduto alla tentazione di salire su una carrozza pubblica – una delle ultime –, i buoni propositi cominciano impercettibilmente a svaporare, perché «nel rollio di quelle vecchie carrozze a due cavalli di Pest, con le loro molle rotte, c'era ancora qualcosa che ricordava il ritmo fluttuante e oscillante dell'altra vita», il mondo dell'Ungheria di un tempo. Per imboccare infine la via di casa solo verso l'alba – prendendo congedo, forse per sempre, da quella città dove tutto pare dimezzato, «come se il piccone del tempo avesse demolito il nobile, prestigioso edificio del passato».
