Fermentation and the use of micro-organisms is one of the most important aspects of food processing – an industry that is worth billions of US dollars world-wide. Integral to the making of goods ranging from beer and wine to yogurt and bread, it is the common denominator between many of our favorite things to eat and drink. In this updated and expanded second edition of Food, Fermentation, and Micro-organisms, all known food applications of fermentation are examined. Beginning with the science underpinning food fermentations, the author looks at the relevant aspects of microbiology and microbial physiology before covering individual foodstuffs and the role of fermentation in their production, as well as the possibilities that exist for fermentation’s future development and application. Many chapters, particularly those on cheese, meat, fish, bread, and yoghurt, now feature expanded content and additional illustrations. Furthermore, a newly included chapter looks at indigenous alcoholic beverages. Food, Fermentation, and Micro-organisms, Second Edition is a comprehensive guide for all food scientists, technologists, and microbiologists working in the food industry and academia today. The book will be an important addition to libraries in food companies, research establishments, and universities where food studies, food science, food technology and microbiology are studied and taught.

Food fermentation professionals and researchers also have lacked a single book that covers the latest advances in biotechnology, bioprocessing, and microbial genetics, physiology, and taxonomy. In Microbiology and Technology of Fermented Foods, Robert Hutkins has written the first text on food fermentation microbiology in a generation. This authoritative volume also serves as a comprehensive and contemporary reference book. A brief history and evolution of microbiology and fermented foods, an overview of microorganisms involved in food fermentations, and their physiological and metabolic properties provide a foundation for the reader. While Mies van der Rohe’s pavilion at the International Exposition in Barcelona in 1929 went unnoticed by most of the visitors to the fairgrounds, contemporary critics enthusiastically hailed it as the most convincing statement of the Modern Age. This book presents 100 selected texts about this much discussed building, written then and now: from the opening speech by the Spanish king, to newspaper articles and private letters, voices of contemporary architects, architecture critics and historians, and even a text by artist Ai Weiwei, who created an installation in the outdoor area of the pavilion in 2010. Thus the history of this building’s reception depicts a dazzling picture and inconceivable breadth, including statements by such eminent authors as Frank Lloyd Wright, Leonardo Benevolo, Rem Koolhaas, Peter Eisenman.

A Los Angeles Latina woman living in poverty and hoping for miracles “comes to stunning and heartbreaking life” in this novel from an award-winning author (Newsday). On a hot, still day in May, Amalia Gómez sees—or thinks she sees—a large silver cross in the sky. Does this vision foretell a miracle? The pragmatic, twice-divorced Amalia is doubtful . . . Amalia’s neighborhood—a decaying area near a shabby part of Hollywood Boulevard—is under attack from gang wars and the police. Her live-in boyfriend is behaving suspiciously, her “fast” teenage daughter Gloria has become too much to handle, and her teenage son is hinting he’s in serious trouble. Most of all, Amalia is haunted by thoughts of her past and her first-born, dead in jail under mysterious circumstances. As the epiphanies and small omens of Amalia’s day build to a climax as wondrous as it is shattering, PEN Center USA’s Lifetime Achievement Award–winning author John Rechy takes us into the complicated life of a Chicano family living in Los Angeles—in all its spirited, gritty reality, giving us “a novel with more truth in it than a carload of best-sellers” (The Washington Post). “A fierce book . . . [told in] tough, uninhibited prose.” —Hartford Courant “A vivid and touching novel . . . Rough, heartbreaking . . . Rechy is masterful.” —San Antonio Express-News “A triumph, a sad, beautiful and loving book rooted in cultural experience as well as deep intuition.” —Newsday “[An] ardently feminist piece of writing. By portraying her abusive past, the poverty and the narrow choices facing Amalia G[ó]mez, Rechy illuminates the plight of certain minority women who remain locked in the dark ages of female emancipation, shut off from any help . . . Amalia G[ó]mez may be the main character, but poverty and ignorance, injustice and fear, are the real subjects of this engaging novel.” —Los Angeles Times

In the late '60s, Julián Ríos began work on what would have been his very first novel, but fearing that it wouldn't pass the stringent Spanish censorship under Franco, decided not to submit the completed book to publishers. Soon distracted by what would be his magnum opus—the Larva series—the manuscript was set aside and forgotten, until the author found and dusted it off almost fifty years later. Quite unlike his later postmodernist work, the short and bitter Procession of Shadows is filled with stories of love, war, and vengeance, focusing on the tiny, remote village of Tamoga—a place where vendettas are passed down from generation to generation, and where violence has left its traces in every corner. A Winesburg, Ohio for the end times, Procession of Shadows shows us a very different side of the usually playful Ríos: dark, direct, and pitiless.

Freedom of religion did not come easily to Cuba or Puerto Rico. Only after the arrival of American troops during the Spanish-American War were non-Catholics permitted to practice their religions openly and to proselytize. When government efforts to ensure freedom of worship began, reformers on both islands rejoiced, believing that an era of regeneration and modernization was upon them. But as new laws went into effect, critics voiced their dismay at the rise of popular religions. Reinaldo L. Roman explores the changing relationship between regulators and practitioners in neocolonial Cuba and Puerto Rico. Spiritism, Santeria, and other African-derived traditions were typically characterized in sensational fashion by the popular press as "a plague of superstition." Examining seven episodes between 1898 and the Cuban Revolution when the public demanded official actions against "misbelief," Roman finds that when outbreaks of superstition were debated, matters of citizenship were usually at stake. He links the circulation of spectacular charges of witchcraft and miracle-making to anxieties surrounding newly expanded citizenries that included people of color. Governing Spirits also contributes to the understanding of vernacular religions by moving beyond questions of national or traditional origins to illuminate how boundaries among hybrid practices evolved in a process of historical contingencies.
