Excerpt from Food Economy in War Time It is well understood by the public that at the present time a rigorous economy in food is not only desirable on general grounds, but absolutely necessary to the success of this country in the task before it. While all may have the wish to economise, many will feel the need of some guidance with regard to the lines upon which economy may be practised without injury to health. Some such guidance this pamphlet is intended to supply. A general economy in the use of food is clearly called for, since its practice will lead to what is now so greatly desirable, an appreciable increase in the current national savings. The country spends some 600,000,000 a year upon its food and a saving of one-tenth of this would be no mean item. But, further, since there is likely to be a serious shortage in particular foodstuffs, and especially in meat, a wise course of economy will include a serious endeavour to substitute the more plentiful for the less plentiful foods. There exists, it is true, a consideration of importance which somewhat complicates the course of simple retrenchment; the necessity, namely, of giving first choice when possible to the foodstuffs which are produced at home, so that our indebtedness to other countries may grow no faster than is necessary during the war. On this point the Government must give the public guidance from time to time. Subject to the qualification just mentioned economy is clearly possible upon each of two lines. Excerpt from The Cost of Food: A Study in Dietaries This edition is offered in order to continue the useful ness of this little book of Mrs. Richards'. It is still hers. Revision has been made only where present-day ideas are radically different from those of ten years ago, with an attempt to give costs more nearly those of today. The figures used are chiefly those of 1915 - 1916, since it is difficult to determine a basis at present on account of the inflated prices of 1917. A comparison of the prices of a few foods in New York in 1901 and 1916 will illustrate the general trend. Excerpt from Food Products Both food legislation and the scientific investigation of certain important aspects of the composition and value of food have undergone an exceptionally rapid development during the past few years. In this volume it is sought to incorporate in the subject matter of a general study of foods the results of these recent advances which heretofore have been too widely scattered to be readily accessible. Excerpt from Fruit Recipes: A Manual of the Food Value of Fruits and Nine Hundred Different Ways of Using Them Acid fruits are not always to be recommended in com bination with starchy foods, and too much add may be used, but all people are not constituted alike: uncooked fruits may or may not agree with one (though in general fruits are best and more direct in effect uncooked and, whether fresh or cooked, should be 'eaten with less sugar than is the usual habit) and special. Fruits or combinations may be found undesirable. Some human beings need food oftener than others or in greater quantity. Some need to be reduced in flesh or the reverse. No hard and fast rules can be laid down; each one should realise the value of fruits as a whole and of fruits individually and should as thoroughly know his own needs. Facts concerning the values of fruits have been widely scattered, hidden behind masses of figures or buried in scientific works. Figures and scientific terms are nec essary in their places, but those included here are only as matters of reference. To be vitally interested is the first requisite for learning more and more. Everyone has not the gift for remembering figures and names, and to be so burdened is often to stop one at the outset or detract seriously from interest. Excerpt from The Divine Authority of the Old and New Testament Asserted Pretenfion to this Charaéter. I would be one Of the lafl to charge any Man with a Want of Honefiy and Sincerity: but there are ma ny Things in his Book that look like a wilful Perverfion and Mifreprefentation of Faéts, as well as Arguments and fometimes fo circum fianced, that it is fcarce pofiible for the molt extenfive Charity to fuppofe that it'was owing to mere Ignorance.
