Excerpt from Food Service in Private Elementary and Secondary Schools Of the private schools offering plate lunches under the National School Lunch Program, h,500 prepared the food in their own facilities. An important part of meal preparation in the schools was baking of bread, cookies, cakes, and pies. A larger proportion of the schools within the National School Lunch Program did all or part of their baking than of the schools outside the Program. Although mny private schools planned to add lunch facilities and services, as of March 1962 about schools with an enrollment of million pupils had no plans for food service. Mesa obstacles limit the extension of lunch service in private schools: (1) mall private schools, particularly in the less densely populated areas, may have too few pupils to support lunch facilities (2) some private schools are in older buildings and the addition of lunch facilities would be difficult and costly; and (3) the burden of needy pupils in economically depressed areas is too great for the people associated with these schools to finance. Abstract: The Federal Government-sponsored food servicesystem in Puerto Rico's schools is examined for 1974-1975.Of the $35.4 million of food products used by schools foodservice programs in Puerto Rico, $4.8 million was suppliedby the USDA's Food Distribution Program. Students in bothprivate and public schools had access to meals under theUSDA School Breakfast Program and National School LunchProgram. All students who were residents of Puerto Rico wereeligible for meals at no charge. The cost of food used in the breakfast programs averaged 20 cents, and in a Type Alunch, 44 cents. Vegetables and fruits comprised the majorportion of the diet which also included dairy, meat, andcereal and grain products. The availability of storagefacilities had a significant impact on the type of foodused, since only about one-third of the schools hadrefrigerator storage and 3% had freezers.
