Alain Ducasse is bewitched by America. The celebrated French chef has discovered, throughout the country, an excellence in food products that has inspired and reshaped his vision of Haute Cuisine. Whether it be in the cold Atlantic waters off the northern coast of Maine or the crimson-colored Arizona mountains, Alain Ducasse has found fishermen, ranchers and farmers across the nation whose products rank among the world's finest foods. Harvesting Excellence celebrates the men and women who devote themselves to the artistry of creating first-rate food products. They whip the thickest creams, shuck the plumpest oysters and feed the strongest game to ensure that only superior products are put on the market. Their stories, although based in a common passion for food, reflect the extraordinary breadth of America -- its climates, landscapes and, above all, its people. Through the book's beautifully illustrated, thematically organized chapters, Ducasse focuses on a select few producers who, with family methods and training from all over the world, yield products unique to American sun and soil. Here is the ultimate gourmet tour of what lies at the heart of all great cooking -- great ingredients. And as a final touch, top chefs from New York, Las Vegas and San Francisco give tips on selecting and preparing the best products for traditional or creative cooking.

Veuve Clicquot Ponsardin has been pushing boundaries for the past 250 years. From inventing rosé champagne in 1775 to collaborating with innovators such as Andrée Putman and the Campana Brothers, with each passing century the legendary label goes above and beyond to challenge itself with new initiatives to energize and excite its enthusiasts. When Madame Clicquot, who had become the veuve (widow) Clicquot Ponsardin, inherited the house in 1805, she followed the motto “Only one quality, the finest” and created the first vintage and the riddling rack, two major innovations for champagne production. Centuries later, the brand behind the characteristic yellow label continues to make history, going beyond champagne to represent a complete lifestyle. In 2010, Veuve Clicquot’s home base in Reims reopened after an extensive four-year renovation by interior designer Bruno Moinard. Contemporary works by Yayoi Kusama, Karen Knorr, and Pablo Reinoso now adorn the eighteenth-century wood paneling at the Hôtel du Marc—a perfect combination of design, art, and gastronomy that acts as a center for sharing and spreading the wealth of a magnificent wine. Veuve Clicquot is the drink of choice in spring at Goodwood Circuit in the United Kingdom, in summer on the polo lawns of New York, and in winter on Carnival chariots in Rio. In 2013, Veuve Clicquot partnered with Michelin-starred chef Joël Robuchon, securing its wines a spot as the guest of honor in each of his twenty-three restaurants. The following year, a collaboration with Ferrari brought the limited-edition Veuve Clicquot Maranello collection. The house has also been active in the sustainability movement, reducing emissions at the Hôtel du Marc, as well as introducing “Naturally Clicquot” eco-friendly packaging, made from the pulp of grapes harvested from the most prestigious hills of the Champagne region—a global first. Between tradition and jet set, excellence and attitude, over the years the house has perfected the way of life “à la Clicquot,” a life synonymous with fine, authentic products and classic culture.

America S Founding Fruit written by Susan Playfair and has been published by University Press of New England this book supported file pdf, txt, epub, kindle and other format this book has been release on 2014-10-07 with Social Science categories.

The cranberry, Vaccinium macrocarpon, is one of only three cultivated fruits native to North America. The story of this perennial vine began as the glaciers retreated about fifteen thousand years ago. Centuries later, it kept Native Americans and Pilgrims alive through the winter months, played a role in a diplomatic gesture to King Charles in 1677, protected sailors on board whaling ships from scurvy, fed General GrantÕs men in 1864, and provided over a million pounds of sustenance per year to our World War II doughboys. Today, it is a powerful tool in the fight against various forms of cancer. This is AmericaÕs superfruit. This book poses the question of how the cranberry, and by inference other fruits, will fare in a warming climate. In her attempt to evaluate the effects of climate change, Susan Playfair interviewed growers from Massachusetts west to Oregon and from New Jersey north to Wisconsin, the cranberryÕs temperature tolerance range. She also spoke with scientists studying the health benefits of cranberries, plant geneticists mapping the cranberry genome, a plant biologist who provided her with the first regression analysis of cranberry flowering times, and a migrant beekeeper trying to figure out why the bees are dying. Taking a broader view than the other books on cranberries, AmericaÕs Founding Fruit presents a brief history of cranberry cultivation and its role in our national history, leads the reader through the entire cultivation process from planting through distribution, and assesses the possible effects of climate change on the cranberry and other plants and animals. Could the American cranberry cease growing in the United States? If so, what would be lost?

"Author of the critically acclaimed Tintin and the World of Hergé and the last person to interview Remi, Benoit Peeters tells the complete story behind Hergé's origins and shows how and why the nom de plume grew into a larger-than-Remi personality as Tintin's popularity exploded. Drawing on interviews and using recently uncovered primary sources for the first time, Peeters reveals Remi as a neurotic man who sought to escape the troubles of his past by allowing Hergé's identity to subsume his own. As Tintin adventured, Hergé lived out a romanticized version of life for Remi."--Jacket.
