Lié au changement écologique (baisse de fertilité du sol, maladies, enherbement), ce facteur structurel survient à la fin de chaque cycle de monoculture, suscitant l’adoption d’une nouvelle spéculation. Par ailleurs, la diversification est encouragée par les politiques publiques mais aussi de plus en plus par les industriels privés.
