Fluid milk processing is energy intensive, with high financial and energy costs found all along the production line and supply chain. Worldwide, the dairy industry has set a goal of reducing GHG emissions and other environmental impacts associated with milk processing. Although the major GHG emissions associated with milk production occur on the farm, most energy usage associated with milk processing occurs at the milk processing plant and afterwards, during refrigerated storage (a key requirement for the transportation, retail and consumption of most milk products). Sustainable alternatives and designs for the dairy processing plants of the future are now being actively sought by the global dairy industry, as it seeks to improve efficiency, reduce costs, and comply with its corporate social responsibilities. Emerging Dairy Processing Technologies: Opportunities for the Dairy Industry presents the state of the art research and technologies that have been proposed as sustainable replacements for high temperature-short time (HTST) and ultra-high temperature (UHT) pasteurization, with potentially lower energy usage and greenhouse gas emissions. These technologies include pulsed electric fields, high hydrostatic pressure, high pressure homogenization, ohmic and microwave heating, microfiltration, pulsed light, UV light processing, and carbon dioxide processing. This thesis consists of two studies on the dairy sector in Kosovo. The first study evaluates the effect of the Subsidy per Head Scheme (SPHS) on increasing production, land use, gross income and number of dairy cows on dairy farms in Kosovo. Results from the Propensity Score Matching (PSM) approach using four alternative matching algorithms revealed that SPHS has not had any impact on increasing land use, gross income or the number of dairy cows per farm. Furthermore, SPHS had a negative impact on decreasing land use and number of cows for the participating dairy farmers in the program. In terms of milk production, SPHS has not had any meaningful effect on increasing milk productivity when compared to farms that did not participate in the program. Improvement in milk production per cow was found to be a statistically significant effect for two matching algorithms. However, two other algorithms revealed insignificant effect of SPHS on improving milk productivity. The second study provides estimates of the technical efficiency level for a random sample of 243 dairy farms in Kosovo over the 2014 farming season. Statistically significant determinants of technical efficiency are identified. A stochastic frontier production function was estimated using a two stage procedure. Results revealed that feeding rates (specifically of concentrates and silage), land use per cow, and the number of days that cows had been kept on pastures have statistically significant impacts on milk productivity per cow. The mean technical efficiency of dairy farms was estimated at 0.72. The major determinants that help to improve the efficiency are breed improvement, intensification of corn production on the farm, improving feeding rates, and using free range production systems. Given the results from the SPHS impact assessment and technical efficiency analysis, it is crucial for the Government of Kosovo to redesign their dairy policy, specifically their direct payment schemes and target technical assistance and investment support based on regional potentials.

Feed is the single greatest expense on a dairy farm, representing approximately half the cost of dairy production over the last ten years. Increasing feed efficiency can reduce feed costs while maintaining milk production levels, improving profitability and sustainability of dairy production. Residual feed intake (RFI) is a measure of feed efficiency that represents the unexplained variation in feed intake after accounting for known energy sinks (i.e., milk energy output, body size, body weight change) within a group of cows managed similarly. Dry matter intake (DMI) is required to determine RFI, yet it is labor intensive and cost prohibitive to collect on most privately-owned dairies. Accurate prediction models of DMI could replace physical measurement, allowing for phenotypic feed efficiency determination on privately-owned dairies. When comparing multiple predictive approaches, traditional linear regression approaches performed as well as, or better than, more advanced techniques. Incorporation of behavioral sensor variables, but not blood metabolites, improved models of DMI, representing an opportunity to improve current models of DMI. Deeper understanding of the mechanisms that contribute to variation in feed efficiency would provide further insight into genetic selection for feed efficiency and can lead to the development of management and nutrition strategies to improve feed efficiency. Postpartum health may influence RFI, given the relationship with energy balance; however, no relationship exists between postpartum health disorders and same-lactation RFI, indicating that genetically selecting for RFI will not inadvertently select for negative health outcomes. Post-absorptive nutrient metabolism was previously identified in beef cattle as a source of variation in RFI, but was not investigated in lactating dairy cows. Between cows divergent in RFI, the blood circulating profile of metabolites differed, indicating differences in fatty acid or amino acid oxidation and providing evidence that post-absorptive nutrient metabolism is a source of variation in RFI of dairy cows. Differences in liver tissue pathways related to oxidative stress, cell cycling, and immune function, and differences in muscle fatty acid and glucose metabolism were identified, suggesting tissue-specific differences that contribute to variation in RFI. This dissertation details deeper understanding of post-absorptive nutrient metabolism as a source of variation in RFI, and ongoing effort will contribute to improving the feed efficiency of the dairy breed, which could have measurable impacts profitability and sustainability of dairy production.
