Poor diets and rising obesity rates among Americans have persisted despite increased awareness and publicity regarding the benefits of a healthy lifestyle. This analysis of consumer food choice developed a consumer demand model to illustrate how both longterm health objectives and immediate visceral influences ¿ long intervals between meals and away-from-home eating ¿ can affect individuals¿ food choices. The model predicts that dietary knowledge will have less influence on food choices in the face of immediate visceral factors. Longer intervals between meals and consumption of more food away from home both contribute to one¿s consuming more calories and more calories from solid fats, alcohol, and added sugars. Poor diets and rising obesity rates among Americans persist despite increased public awareness of the benefits of a healthy lifestyle. This report presents a consumer demand model to illustrate how both long-term health objectives and immediate visceral influences-long intervals between meals and eating away from home-can drive individuals' food choices. The model predicts that cognitive dietary information will have less influence on food choices in the face of immediate visceral factors. Using data from the 1994-96 Continuing Survey of Food Intake by Individuals and the companion Diet Health and Knowledge Survey, the analysis finds that when individuals extend the period between meals or consume more of their food away from home, they are significantly more likely to consume more calories and lower diet quality.

The year 2019 marks 30 years since the fall of the Berlin wall. This symbolic event led to German unification and the collapse of communist party rule in countries of the Soviet-led Eastern bloc. Since then, the post-communist countries of Central, Eastern and South-eastern Europe have tied their post-communist transition to deep integration into the West, including EU accession. Most of the states in Central and Eastern Europe have been able to relatively successfully transform their previous communist political and economic systems. In contrast, the non-Baltic post-Soviet states have generally been less successful in doing so. This book, with an internationally respected list of contributors, seeks to address and compare those diverse developments in communist and post-communist countries and their relationship with the West from various angles. The book has three parts. The first part addresses the progress of post-communist transition in comparative terms, including regional focus on Eastern and South Eastern Europe, CIS and Central Asia. The second focuses on Russia and its foreign relationship, and internal politics. The third explores in detail economies and societies in Central Asia. This book documents how whiteness can take up space in U.S. cities and policies through well-intentioned progressive policy agendas that support green urbanism. Through in-depth ethnographic research in Kansas City, Chhaya Kolavalli explores how urban food projects-central to the city's approach to green urbanism-are conceived and implemented and how they are perceived by residents of "food deserts," those intended to benefit from these projects. Through her analysis, Kolavalli examines the narratives and histories that mostly white local food advocates are guided by and offers an alternative urban history of Kansas City-one that centers the contributions of Black and brown residents to urban prosperity. She also highlights how displacement of communities of color, through green development, has historically been a key urban development strategy in the city. Well-Intentioned Whiteness shows how a myopic focus on green urbanism, as a solution to myriad urban "problems," ends up reinforcing racial inequity and uplifting structural whiteness. In this context, fine-grained analysis of how whiteness takes up space in our cities-even through progressive policy agendas-is more important. Kolavalli examines this process intimately and, in so doing, fleshes out our understanding of how racial inequities can be (re)created by everyday urban actors.
