This major history of Hong Kong tells the remarkable story of how a cluster of remote fishing villages grew into an icon of capitalism. The story began in 1842 with the founding of the Crown Colony after the First Anglo-Chinese war - the original 'Opium War'. As premier power in Europe and an expansionist empire, Britain first created in Hong Kong a major naval station and the principal base to open the Celestial Chinese Empire to trade. Working in parallel with the locals, the British built it up to become a focus for investment in the region and an international centre with global shipping, banking and financial interests. Yet by far the most momentous change in the history of this prosperous, capitalist colony was its return in 1997 to 'Mother China', the most powerful Communist state in the world.

Why would China jeopardize its relationship with the United States, the former Soviet Union, Vietnam, and much of Southeast Asia to sustain the Khmer Rouge and provide hundreds of millions of dollars to postwar Cambodia? Why would China invest so much in small states, such as those at the China-Africa Forum, that offer such small political, economic, and strategic return? Some scholars assume pragmatic or material concerns drive China's foreign policy, while others believe the government was once and still is guided by Marxist ideology. Conducting rare interviews with the actual policy makers involved in these decisions, Sophie Richardson locates the true principles driving China's foreign policy since 1954's Geneva Conference. Though they may not be "right" in a moral sense, China's ideals are based on a clear view of the world and the interaction of the people within it-a philosophy that, even in an era of unprecedented state power, remains tied to the origins of the PRC as an impoverished, undeveloped state. The Five Principles of Peaceful Coexistence mutual respect for territorial integrity and sovereignty; nonaggression; noninterference; equality and mutual benefit; and peaceful coexistence live at the heart of Chinese foreign policy and set the parameters for international action. In this model of state-to-state relations, the practices of extensive diplomatic communication, mutual benefit, and restraint in domestic affairs become crucial to achieving national security and global stability.

The Jesuit mission to China more than four hundred years ago has been the subject of sustained scholarly investigation for centuries. Focusing on the concepts of friendship and hospitality as they were both theorized and practiced by the Jesuit missionaries and their Confucian hosts, this book offers a new, comparative, and deconstructive reading of the interaction between these two vastly different cultures. Dongfeng Xu analyzes how the Jesuits presented their concept of friendship to achieve their evangelical goals and how the Confucians reacted in turn by either displaying or denying hospitality. Challenging the hierarchical view in traditional discourse on friendship and hospitality by revealing the irreducible otherness as the condition of possibility of the two concepts, Xu argues that one legacy of the Jesuit-Confucian encounter has been the shared recognition that cultural differences are what both motivated and conditioned cross-cultural exchanges and understandings.

Why do the Chinese, who are mostly lactase non-persistent, suddenly thirst for milk today? Whether it is formula milk, fresh cow milk, or tea with condensed milk, the rocketing milk consumption and production in China are of increasing global food safety, health, and environmental concerns. Milk Craze examines and compares developments in China's dairy industry and dietary dairy consumption, cross-nationally and globally, and more specifically in two localities: Shunde and Hong Kong. Through an innovative analysis of medical texts and social media, as well as careful ethnographic studies, Veronica Mak ponders why the surge in demand for Western cow milk coincides with the plunge in sales of indigenous water-buffalo milk and cheese. She reveals the multiple ways in which global industries and Chinese dairy conglomerates sabotage and destroy local dairy farms. She shows that the rise of milk consumption is not just about the globalization of cow milk production and Westernization of the Chinese diet, but also due to the crossovers between the traditional Chinese diet and medicine and modern global diets. She uses these reference points to explore the multiple meanings of dairy foods in China, such as the class and cultural attributes associated with British “milk tea” and flavored yogurt products, water buffalo curds and cheese, and the lower class associations of labor in the water-buffalo dairying industries, and then discusses these developments in China through colonial and modern global perspectives. Milk Craze argues powerfully that the Westernization or dramatic change of diet in China too often obscures structural, educational, occupational, and social stresses and constraints, while naturalizing the dubious redefinition of health, cognitive performance, and ideal body shape as individual responsibility and imperative.

Besides looking at major outbreaks of diseases and how they were coped with, diseases such as malaria, smallpox, tuberculosis, plague, venereal disease, avian flu and SARS, this book also examines how the successive government regimes in Hong Kong took action to prevent diseases and control potential threats to health. It shows how policies impacted the various Chinese and non-Chinese groups, and how policies were often formulated as a result of negotiations between these different groups. By considering developments over a long historical period, the book contrasts the different approaches in the periods of colonial rule, Japanese occupation, post-war reconstruction, transition to decolonization, and Hong Kong as Special Administrative Region within the People’s Republic of China.
