Aufgrund verschiedener Ereignisse wurde die Warenverfügbarkeit im Handel bei Food- und Nonfood-Aktionsartikel vermehrt eingeschränkt in 2021 und 2022. Kunden fanden beim Einkauf im Lebensmitteleinzelhandel (LEH) die beworbenen und gewünschten Produkte nicht vor. Diese Situation wird auch als Out-of-Stock (OoS) bezeichnet. Die Gründe für die Nichtverfügbarkeit von Produkten sind häufig Probleme in der Lieferkette und im Verräumprozess innerhalb der Filiale. Die Kunden reagieren auf OoS mit einer zeitlichen Verschiebung des Kaufs, dem Erwerb eines Substitutionsproduktes, dem Kauf in einer anderen Filiale des Händlers oder dem Unterlassen des Kaufs. Dies führt in unterschiedlichem Maße zu einem Umsatzrückgang der Händler und/oder der Hersteller. Dabei werden die Kundenreaktionen von verschiedenen Faktoren wie der Markenloyalität, der Verfügbarkeit angebotener Substitute und vielen weiteren Faktoren beeinflusst. In dieser Studie liegt der Fokus auf nur temporär angebotenen Artikeln und ihren Spezifika bei Food und Nonfood.

Dies führt in unterschiedlichem Maße zu einem Umsatzrückgang der Händler und/oder der Hersteller. Dabei werden die Kundenreaktionen von verschiedenen Faktoren wie der Markenloyalität, der Verfügbarkeit angebotener Substitute und vielen weiteren Faktoren beeinflusst. Hierbei kann im Rahmen einer Befragung festgestellt werden, dass 36 % der Kunden überwiegend mit dem Kauf eines Alternativproduktes einer anderen Marke auf OoS reagieren. Auch sind 29 % der Befragten dazu bereit, aufgrund von OoS eine andere Filiale aufzusuchen.
