Nonostante questo si conosce ancora poco della sua biologia e delle dinamiche che lo spingono a spostarsi in cerca di cibo e di luoghi adatti alla riproduzione. La conservazione si attua solo attraverso la conoscenza e per questo, senza la pretesa di essere originale, ho raggruppato una sintesi di dati, curiosità e ricerche scientifiche, il tutto condito con qualche commento personale. Per chi desiderasse approfondire alcuni argomenti, ho aggiunto, in appendice, una lista bibliografica che, se pur non completa, permette di spaziare dai testi scientifici, ai romanzi, ai libri di cucina.

Miti e riti che rivivono, ancora oggi, nelle pieghe della religiosità popolare, eco mai sopìta di quella grande, grandissima ‘religione della Terra’. Una religione che eleggerà la spiga di grano, la ‘sacra spiga’, a sua icona. Dal Neolitico essa sarà al centro di numerosi ‘culti agrari’, ‘totem’ incontrastato dell’orizzonte culturale mediterraneo. Da Eleusi all’Europa cristianizzata, da Demetra alle Vergini cristiane, la spiritualità mediterranea sembra dipanarsi nel solco tracciato dalla ‘civiltà del grano’. Una civiltà che segnerà il paesaggio mediterraneo in maniera indelebile, modificandone la storia e la geografia. In sostanza, il grano indurrà l’uomo primitivo ad organizzare le prime forme di società civile. La spiga di grano diverrà, ben presto, il simbolo dell’ordine sociale ed alimentare dischiuso con l’agricoltura. MARIA IVANA TANGA è giornalista professionista.
