Tying the ingredients of our diet evolution to the growth of human civilization, he immerses readers in the passionate debates and bold inventions that transformed food from a simple staple to a potent factor in health and a symbol of social and ideological standing. Montanari returns to the prestigious Salerno school of medicine, the "mother of all medical schools," to plot the theory of food that took shape in the twelfth century. He reviews the influence of the Near Eastern spice routes, which introduced new flavors and cooking techniques to European kitchens, and reads Europe's earliest cookbooks, which took cues from old Roman practices that valued artifice and mixed flavors. Dishes were largely low-fat, and meats and fish were seasoned with vinegar, citrus juices, and wine. He highlights other dishes, habits, and battles that mirror contemporary culinary identity, including the refinement of pasta, polenta, bread, and other flour-based foods; the transition to more advanced cooking tools and formal dining implements; the controversy over cooking with oil, lard, or butter; dietary regimens; and the consumption and cultural meaning of water and wine. As people became more cognizant of their physicality, individuality, and place in the cosmos, Montanari shows, they adopted a new attitude toward food, investing as much in its pleasure and possibilities as in its acquisition.

A un certo punto, il signor Mondadori mi chiede di diventare il curatore di una rivista scientifica. «Signor Mondadori, sono lusingato, ma mi concede un azzardo?» «Quale, o villoso Barbascura?» «Mi faccia fare una rivista a modo mio.» «Intendi a cazzo di cane?» «Esatto. Una rivista scientifica più pop, dove possiamo parlare anche di roba sconcia, che sia tanto scientifica quanto spassosa, e che se ci scappa faccia venire pure una paresi facciale.» «Intendi "ridere"?» «Non esageriamo.» Quel babbeo del signor Mondadori ha accettato, ed eccoci qui. L'idea è semplice: 1. Scegliere l'argomento del volume. 2. Chiedere a varati e ben noti divulgatori scientifici di scrivere pezzi su tale argomento nello stile più smaliziato e pop possibile. 3. Chiedere a stand-up comedian di gettarla in caciara in inserti a loro dedicati. 4. Mischiare il tutto con una mannaia. 5. Ingollare crudo. Complimenti! Se sei qui sei il fortunato detentore del primo numero di questo accrocchio scientifico! A quanto mi risulta, è il primo esperimento di un siffatto prodotto in Italia. Chissà, forse è anche il primo in Europa. Questo potrebbe voler dire che si tratta di una pessima idea. Scopriamolo. Vediamo se riusciamo ad arrivare al numero 2! Ma direi di iniziare coi FUOCHI D'ARTIFICIO. Partiamo col botto, perché per questo primo numero ho scelto un argomento croccante: L'AMMORE!

Millenni di esplorazioni culinarie hanno plasmato i modi di vivere di ogni popolo, la sua cultura e tradizioni. Mangiare carne di cavallo è un gesto alimentare ripugnante per gli anglosassoni, ma sgranocchiare le ossa di un coniglio lo è per il popolo thai, mentre nutrirsi di insetti o di funghi allucinogeni è inconcepibile per l’italiano innamorato delle lasagne. Da sempre ciò che mangiamo ci dice molto sulle nostre credenze religiose, appartenenza di classe, impegno etico e molto altro. Per questo, mangiare le chapulines – le cavallette messicane saltate in padella con aglio, limetta e sale – è un atto culturale vero e proprio con cui approcciare il Sudamerica. E decidere se rifocillarsi di placenta umana sia riprovevole auto-cannibalismo o un atto nutritivo per le puerpere dipende dalle nostre stravaganti convinzioni. E nel futuro? Perderemo il gusto e tutto sarà sintetizzato geneticamente? Probabilmente saremo molto più responsabili, e forse davvero penseremo a nutrire anche il pianeta oltre che noi stessi.
