Il volume nasce all’interno delle attività della sezione di Cagliari dell’ANVRG (Associazione Nazionale Veterani e Reduci Garibaldini) e mette in relazione, attraverso lo studio dell’uso storico del cibo, due delle figure più importanti del Risorgimento italiano: Giuseppe Garibaldi e Giuseppe Mazzini. Il saggio introduttivo “Pesi e misure nella Genova dei Dogi: organizzazione annonaria, commercio, alimentazione in Antico Regime” di Raffaella Ponte restituisce la complessa organizzazione e gestione della vendita dei generi alimentari prodotti e ridistribuiti da uno dei principali porti del Mediterraneo in età moderna. “La spedizione garibaldina in Grecia, tra eroismo e fame” di Andrea Spicciarelli ed Emanuela Locci tratta della spedizione militare in Grecia del 1897 in seguito alla ribellione scoppiata a Creta contro l’Impero Ottomano. L’impresa si rivelò disastrosa dal punto di vista logistico: la costante mancanza di viveri causata dall’inefficienza del governo greco costrinse i volontari garibaldini a dover provvedere per proprio conto con approvvigionamenti “di fortuna”. Stefano d’Atri in “Il cibo nostro prediletto. La pasta come simbolo dell’identità italiana” ci accompagna nel viaggio di affermazione della pasta come alimento identitario italiano per eccellenza, sottolineando il fatto che, dai maccheroni napoletani ai commerci di Antico Regime fino all’unificazione territoriale risorgimentale, la pasta è stata protagonista della storia d’Italia. Camilla Zucchi in “Un mito italiano mai riconosciuto: le fettuccine Alfredo” ci racconta la storia di un fenomeno culinario italiano negli Stati Uniti d’America. Le fettuccine Alfredo, ideate nel 1914, sono oggi un simbolo multiforme: proprio perché non riconosciuto, è visto dagli italiani come simbolo di italo-americanità, di “tradizione inventata” americana, mentre negli Stati Uniti viene considerato come una delle ricette simbolo del Belpaese. Il contributo di Roberto Liberi “A tavola con la Regia Marina” accompagna il lettore sulle tavole della Regia Marina dall’epoca dannunziana dopo la Prima guerra mondiale ai pranzi dei militari nel corso del secondo conflitto, passando per i ricevimenti pubblici dei sovrani Savoia. Si tratta di uno studio di approfondimento basato su fonti completamente inedite perché afferenti alle collezioni private dell’associazione culturale“Menu Associati” e appartenenti alla memoria delle figure della Marina Militare. Il volume si conclude con il contributo di Alice De Matteo e Roberto Ibba dedicato al progetto didattico A tavola con Gribaldi e Mazzini, il cui l’obiettivo è stato quello di interrogarsi sul rapporto tra costruzione nazionale e cucina. Attraverso diversi appuntamenti seminariali rivolti a pubblici non specializzati, si è contestualizzato, assaggiato e cucinato le ricette mazziniane e garibaldine: entrambi espulsi dal contesto di provenienza, Garibaldi e Mazzini si confrontarono con la cultura dei luoghi di accoglienza, rafforzando la propria identità nazionale attraverso la tradizione culinaria, riconoscendo così all’azione di consumare cibo un significato politico.

The twentieth century saw a proliferation of media discourses on colonialism and, later, decolonisation. Newspapers, periodicals, films, radio and TV broadcasts contributed to the construction of the image of the African “Other” across the colonial world. In recent years, a growing body of literature has explored the role of these media in many colonial societies. As regards the Italian context, however, although several works have been published about the links between colonial culture and national identity, none have addressed the specific role of the media and their impact on collective memory (or lack thereof). All nations make themselves up as they go along, but not all make themselves up in the same way. In this study, Alon Confino explores how Germans turned national and argues that they imagined the nation as an extension of their local place. In 1871, the work of political unification had been completed, but Germany remained a patchwork of regions with different histories and traditions. Germans had to construct a national memory to reconcile the peculiarities of the region and the totality of the nation. This identity project, examined by Confino as it evolved in the southwestern state of WArttemberg, oscillated between failure and success. The national holiday of Sedan Day failed in the 1870s and 1880s to symbolically commingle localness and nationhood. Later, the idea of the Heimat, or homeland, did prove capable of representing interchangeably the locality, the region, and the nation in a distinct national narrative and in visual images. The German nationhood project was successful, argues Confino, because Germans made the nation into an everyday, local experience through a variety of cultural forms, including museums, school textbooks, popular poems, travel guides, posters, and postcards. But it was not unique. Confino situates German nationhood within the larger context of modernity, and in doing so he raises broader questions about how people in the modern world use the past in the construction of identity.
