I volumi nascono dalla esigenza comune da parte della comunità scientifica operante nel dipartimento di Economia Aziendale dell’Università degli studi di Roma Tre di dare il suo contributo alla ripartenza conseguente la pandemia da Covid-19, peraltro ancora in corso. L’iniziativa nasce da uno scambio di idee, esercitato nel corso del lockdown da parte di alcuni colleghi, cui ha fatto seguito un’azione coordinata da alcuni ma condivisa e sposata da tutti gli autori. Il Dipartimento ha aderito in toto, con ciò dando un concreto segnale di quanto tutti i Professori del Dipartimento di Economia Aziendale, ciascuno con le sue competenze specifiche abbiano saputo dare il loro contributo all’iniziativa. I volumi rappresentano un concreto esempio dell’attività multidisciplinare perpretata, nel continuo, all’interno del nostro Dipartimento attraverso la fattiva attività di ciascuno dei suoi membri ed il coordinamento del Direttore. Le clausole di tag e drag along, tradizionalmente presenti nei patti parasociali e negli statuti delle società per azioni, hanno conosciuto nuove forme di impiego negli statuti di società a responsabilità limitata, volte a fronteggiare specifiche esigenze di disciplina della circolazione delle quote in presenza di compagini societarie a base familiare frammentata ovvero “ad alta conflittualità”. La matrice anglosassone di queste clausole chiama il Notaio ad effettuare un difficile vaglio di compatibilità rispetto a principi cardine del nostro ordinamento giuridico, sui quali tag e drag along hanno mostrato avere talora effetti dirompenti, primo fra tutti il diritto individuale alla conservazione della qualitas di socio ed il diritto all’equa valutazione del c.d. FMV (fair market value, ossia il valore di mercato) della partecipazione. It is well established that certain strains of yeasts are suitable for transforming grape sugars into alcohol, while other yeast strains are not suitable for grape fermentations. Recent progress has clearly demonstrated that the sensory profile of a wine is characteristic of each vine cultivated, and the quality and technological characteristics of the final product varies considerably due to the strains which have performed and/or dominated the fermentation process. Because of their technological properties, wine yeast strains differ significantly in their fermentation performance and in their contribution to the final bouquet and quality of wine, such as useful enzymatic activities and production of secondary compounds related both to wine organoleptic quality and human health. The wine industry is greatly interested in wine yeast strains with a range of specialized properties, but as the expression of these properties differs with the type and style of wine to be made, the actual trend is in the use of selected strains, which are more appropriate to optimize grape quality. Additionally, wine quality can be influenced by the potential growth and activity of undesirable yeast species, considered spoilage yeasts, which cause sluggish and stuck fermentation and detrimental taste and aroma in the wine.

This book reveals how school memories offer not only a tool for accessing the school of the past, but also a key to understanding what people today know (or think they know) about the school of the past.
