Quite as much care should be exercised in the table appointments at lunch as at any other meal. If servants are allowed to shirk their duties at one time, is it not human to expect them to be careless whenever they feel so disposed? Should a child be expected to have pretty table manners at a particular meal, when he is allowed to run riot at others? Heavy soups should not appear at the luncheon table, for it is too much to ask of a servant to make soup twice a day. Clam broth, however, is easily made, and served in cups is always acceptable. Small china crocks of beef extract should always be on hand for emergency cases, as a cup of bouillon is then quickly prepared. Excerpt from Luncheon Dishes It having been suggested to me that a collection of Menus for easily-prepared Luncheon Dishes would be appreciated by the Public, I have brought out the accompanying little book on the subject. Many of the receipts contained in it are obtained from family MSS. (one dating as far back as 1696), a few of the receipts are original, and several are new. I have given the cost of each dish, as far as possible, and have arranged the Menus with regard to the season of the year. As regards decorations for the table, I have purposely omitted suggesting anything elaborate, because I consider that, however appropriate decorations may be for "dinner," luncheon being a daylight meal, the less the spotless linen of the table is hidden from view, except by fruit and flowers, the better is the taste displayed by the hostess. Excerpt from Fifty Lunches I. Lay a hare upon a board, cut it in two behind the shoulders, and remove the hind legs and thighs. Set aside all the portions thus removed for civet, soup, or jugged hare. All you want for the cutlets is the saddle. First remove the two back fillets from this, and the under fillets. Out of these trim as neatly as you can as many cutlets as the meat will yield half an inch thick, two and a half long, and one and three-quarters across in the broadest part. Some cooks complete the cutlet-like appearance by slipping into each of them a piece of bone, which may be taken from the ribs. Next, lard the meat through - i.e., draw the strips of bacon through, not in and out as in ordinary larding, and snip off the ends short with scissors, giving the meat the appearance of being studded with little nails of bacon. When shaped and nicely prepared, lay the cutlets on a dish for the present while you proceed to make a broth with the trimmings and backbones left after the preparation.
