Das neu erschienene Buch fasst die Ergebnisse eines umfangreichen Forschungsprojektes an der Universität Göttingen zusammen. Am Lehrstuhl für Lebensmittelmarketing (Prof. Dr. Achim Spiller) wurden im Rahmen einer Studie insgesamt 1.873 Kunden in 21 Naturkostfachgeschäften zu ihrer Kundenzufriedenheit befragt. Durch die Entwicklung des Biomarktes in den letzten Jahren wurde das Naturkostsegment auch für den konventionellen Lebensmitteleinzelhandel zu einem attraktiven Geschäftsfeld. Der klassische Naturkostfachhandel (Bio-Läden, Bio-Supermärkte) steht daher verstärkt unter Konkurrenzdruck und muss versuchen, seine Marktanteile zu verteidigen. Das vorliegende Buch analysiert den Einfluss der Kundenzufriedenheit auf den ökonomischen Erfolg im Naturkostfachhandel und leitet daraus Marketingempfehlungen für die Handelsunternehmen ab. Mit Hilfe neuerer Analysemethoden (z. B. PLS-Strukturgleichungsmodell) können die Erfolgsfaktoren identifiziert werden. Insgesamt sind die Kunden in Naturkostläden zufriedener als im konventionellen Handel. Allerdings decken die betrachteten Geschäfte eine große Spannbreite ab, und es bestehen erhebliche Unterschiede zwischen dem besten und dem schlechtesten Bioladen. Interessant für das Management ist darüber hinaus, dass Kundenzufriedenheit und Kundenbegeisterung das Weiterempfehlungsverhalten der Kunden nachhaltig positiv beeinflussen. Zufriedene Kunden sind wichtige Meinungsführer in ihrem Freundes- und Bekanntenkreis und stellen eine kostengünstige und besonders glaubwürdige Form des Marketings dar. Dies ist auch deshalb wichtig, weil die Werbeausgaben in der Branche mit häufig unter 1 % des Umsatzes ausgesprochen gering sind Insgesamt gibt die Forschungsarbeit wichtige Hilfestellungen für den sich dynamisch entwickelnden Naturkostfachhandel. Die Branche weist nun seit vielen Jahren beachtliche jährliche Steigerungsraten auf und professionalisiert sich zunehmend. Das Buch ist auch interessant für die Hersteller von Bioprodukten sowie Führungskräfte aus Beratung, Politik und Verwaltung.
