L’huile, un produit depuis si longtemps intimement lié à la vie de notre cité portuaire qu’on y retrouve encore, sous son appellation ancienne de « Place aux huiles », le lieu spécifique où s’effectuaient les opérations à quai de chargement et de déchargement de ces lourdes futailles. Dans les limites de notre circonscription consulaire, des terroirs renommés pour leurs oliveraies : hier, Aix qui, aux xviie et xviiie siècles, produisait une huile considérée comme la meilleure du royaume ; aujourd’hui, La Fare-les-Oliviers... En ce Palais de la Bourse, lieu privilégié où se forge le destin économique de notre région, où sont débattus les problèmes intéressant les nombreux pays riverains d’une mer unificatrice, il est pour le moins agréable d’accueillir de semblables tables rondes qui font le point des connaissances sur le présent, mais aussi le passé d’un secteur d’activité.
