La gestion de la santé bucco-dentaire des personnes âgées est en pleine évolution. En effet, l'allongement de la vie entraîne une augmentation de la proportion de ces personnes âgées dans notre société et favorise l'émergence de problèmes chroniques susceptibles d'évoluer vers la dépendance ou le handicap, ce qui nécessite des prises en charge nouvelles en odontologie gériatrique. Si les techniques de soins ne diffèrent que peu de celles mises en oeuvre chez l'adulte plus jeune, avec bien sûr la prise fréquente de précautions liées à l'état général du patient, c'est dans l'adaptation des soins et plus généralement du plan de traitement, aux capacités physiques et mentales de ces patients que réside la spécificité de la gérodontologie. L'élimination des foyers infectieux et le rétablissement de l'esthétique sont en général bien appréciés par le chirurgien-dentiste et son patient, mais il n'en est pas toujours de même pour le rétablissement de la fonction masticatoire compte-tenu bien souvent de la complexité du problème. Un régime alimentaire déséquilibré voire insuffisant, avec les carences que cela entraîne, a des répercussions néfastes sur la santé. Il est évident qu'un mauvais état bucco-dentaire peut prendre part à l'installation d'une malnutrition, point sur lequel nous allons insister dans notre étude. En effet, les individus souffrant d'une incapacité masticatoire totale ou partielle adoptent des comportements alimentaires restrictifs, évitent les aliments difficiles à mastiquer comme la viande ou les fruits et légumes frais et à long terme finissent par compromettre leur équilibre alimentaire. Si un traitement prothétique permet un rétablissement partiel de l'efficacité masticatoire, il ne permet pas à lui seul de recouvrer un régime alimentaire équilibré et devrait être accompagné de conseils diététiques.
