Excerpt from Modern Dairying: Dairy Experts In no other industry has there been more rapid changes in recent years than in that of Dairying. The machinery and utensils invented a few years ago are being greatly improved, and many are now quite out of date. Inventive minds are constantly at work to improve existing methods. Chemists, bacteriologists, and others skilled in science have given earnest attention to investigating and improving the properties of dairy products. The necessity has therefore arisen for the publication of an up-to-date manual for the information of those engaged in Victoria in the Dairying Industry. The production of such a work, while being of special interest to the advanced butter and cheese maker, will also, it is hoped, prove of service to all milk suppliers and dairy produce manufacturers. The two dairy experts - Messrs. D. Wilson and R. Crowe - attached to this Department have devoted themselves to the task of producing a work which, I trust, will be found to give all the information which correspondents with the Department are frequently asking for. The advice tendered, it is hoped, will have the effect of causing improvement on the part of some suppliers and manufacturers, for no matter how advanced a country may be in its methods of producing, there are always some laggards who bring reproach on those whose desires are to advance and not retard. We live in a progressive age. Times change, and we must change with them if we are to prosper. The marvellous progress which has taken place in the Dairying Industry in Victoria is almost a matter of history, and came as a surprise to other countries; and, aided as we are by science, the extent of its further development and expansion is almost incomprehensible. It therefore behoves us to exercise the greatest care in keeping up and increasing the high standard we have reached. In the late nineteenth century most dairy farmers went about their work in much same manner as had their predecessors centuries earlier. However, by 1940 most farmers practiced recognizably modern dairying techniques. Use of mechanical milking machines was widespread and growing, farmers compounded rations by combining feeds that blended precise proportions of proteins, carbohydrates, fats, and vitamins, and breeders, eager to maximize the influence of productive bloodlines, evaluated their animals with the use of scientific scorecards and employed intense breeding plans that relied on various forms of inbreeding in order to fix the desirable aspects of prized cattle. Yet the majority of these changes were instigated not by the dairy farmers who actually performed the tasks but by agricultural scientists working in the laboratories of the nation's agricultural colleges and experiment stations. Agricultural science emerged in Germany in the 1840's; Americans pursuing advanced degrees in Europe brought these ideas to the United States War and received an official imprimatur with the passage of the Hatch Act in 1892, which dedicated federal funds to the establishment and maintenance of agricultural experiment stations. The focus of this study is the work performed by these scientists in shaping the development of American dairy farms between 1890 and 1940. Researchers not only made scientific advances, such as the discovery of vitamins, that led to new methods of feeding and breeding dairy cattle but also invented and evaluated technological advances such as the Babcock Milk-fat test and mechanical milking machines that would revolutionize American dairying. This work contributes to our understanding of the emergence of the modern dairy farm by demonstrating that it was agricultural scientists, more so than farmers, who established the outlines of the modern dairy. They did so not only by adopting common techniques and methodologies that fostered communication and cooperation between and among researchers but by employing a number of rhetorical devices that broke down the barriers between laboratory and farm. While farmers enjoyed the benefits of scientific advances, they did so at the cost of their autonomy as scientists increasingly dictated what constituted modern dairying.

It is found that although one cow gave a large yield for a time it soon went dry, while another animal which did not start off so well continued to milk for the best part of a twelvemonth. The one pays, the other does not. It may be taken for granted that a minimum of six hundred gallons is necessary if a cow is to leave a profit, and any cow which gives a record of less than this during two consecutive years should be dispensed with. Not only does the record save the dairyman from loss with bad cows, by enabling him to select those which are profitable, it also permanently and continuously increases the value of his stock. If only the best cattle are kept for the service of the herd, and if these are mated with a bull from a deep-milking dam, and the heifer calves reared for the dairy, the improvement in a few years is enormous, and will be the immediate result of keeping a proper record and knowing the capabilities of every animal in the herd. As a Health Indicator. But there is a further advantage in keeping a milkrecord which must never be overlooked. The milk-yield is a very good criterion of the state of the health of the cow. At the seasonal period it is a matter of common experience that there is often a sudden drop in me milk; but this is only of a temporary nature, and a return is soon made to the normal. On the other hand, sudden variation may often point to the approach of some disease, and the cowman should always pay particular attention to such variations and report them to his master. The nervous system must be intimately connected with the udder and its operations, though I am aware that there are some who deny this, for anyone who knows the effect of fear or nervous excitement upon a cow cannot help...
