Sobretudo, em Pelotas: escravidão e charqueadas, o historiador Euzébio Assumpção narrou a história dos trabalhadores cativos nas fábricas de salgar carnes no maior centro charqueador da América sulina. Demonstrou que o número de africanos e seus descentes no território rio-grandense foi maior que o informado pela historiografia oficial. Observou que o charque chegou a ser responsável por 85% das exportações rio-grandenses. Daí salientou importância econômica do setor que mais empregou mão de obra cativa na província. Verificou que nos saladeiros pelotenses a média de escravizados era de 64,8 trabalhadores. Porém, salientou que em algumas fábricas chegaram a ter mais de uma centena e meia de cativos. Calculou que os homens estavam representados em 86,5%; as mulheres, em 13,5%. Explicou que a maioria ser gênero masculino podia ser conseqüência do rigor do trabalho na matança e aclarou sobre o desinteresse dos proprietários com a família escravizada. Constatou que os africanos predominavam sobre os crioulos. Ponderou que o envelhecimento da população escravizada ocorreu depois da lei Euzébio de Queiroz. Avaliou as relações inter-sociais, entre proprietários e cativos, e afirmou serem violentas. Mostrou que as punições foram utilizadas até o final do regime servil. Propôs que a resistência contou com insurreições, assassinatos, sobretudo, de capatazes, e fugas, às vezes, para obter liberdade em algum quilombo. Observou que o maior número de cartas alforrias foi lançado em 1884, porém, com clausulas de serviço obrigatório que perduraram até a data da Abolição.
