A mandioca é um dos principais alimentos na mesa do povo brasileiro, principalmente do nordestino. O consumo é feito nas refeições diárias, em forma de farinha e usada na elaboração de iguarias derivadas desse tubérculo, constituindo-se numa fonte de energia necessária para o ser humano e animal. É cultivada em quase todo o país, em áreas impróprias para as outras culturas, pois não exige solos com alta fertilidade e é adaptável à seca. O objetivo do estudo é analisar como se processa o sistema da cadeia produtiva da mandioca e seu aproveitamento pela indústria, na Bahia, através de um estudo de caso em três territórios de identidade, em propriedades domésticas, familiar e cooperativas que trabalham com mandioca, desde o plantio até a comercialização dos produtos dessa cultura e se ela tem contribuído para o desenvolvimento regional. A pesquisa teve caráter exploratório através dos meios bibliográfico, documental e de campo, cujo procedimento técnico consistiu-se em um estudo de caso. Os dados foram coletados com aplicação de questionários e observações diretas junto a uma amostra de oitenta e sete produtores rurais e três cooperativas, pela técnica de amostragem não probabilística intencional ou por julgamento. Pode-se concluir que a cadeia produtiva da mandioca não se encontra capacitada e organizada para transformar as oportunidades que o mercado possa oferecer e, com isso, contribuir para o desenvolvimento regional. Na Bahia, a mandioca, se comparada às outras culturas, encontra-se em situação marginal, visto que as limitações tecnológicas, a falta de políticas públicas e a expansão assimétrica do capitalismo que dividiu os produtores em dois segmentos: o que usa a tecnologia para extrair da raiz da mandioca os produtos derivados e o que permanece usando o meio manual para esse fim, contribuíram para o esfacelamento da cadeia produtiva. Os produtores que permanecem no campo são aqueles excluídos pelo capitalismo. Apurou-se ainda que a cultura da mandioca, embora tenha servido para sustentar as famílias dos produtores, não tem contribuído para a permanência do homem no campo, pois os trabalhadores envelheceram e os jovens não querem permanecer por lá. Nas cooperativas verificou-se que, apesar de restringirem a extração dos produtos resultantes da mandioca (fécula ou produção da farinha), encontram-se organizadas para atenderem os produtores cooperados e aproveitarem as oportunidades mercadológicas. Para cultivar mandioca, faltam políticas públicas e de tecnologia, os retornos com a produção são pequenos, a quantidade de pesquisa é pequena, a demanda tem diminuído e não há investimento no setor que trabalha com a mandioca.
