O habito alimentar de um povo e um fenomeno complexo que se forma a partir da interacao de fatores que sao determinados pelas varias esferas da sociedade. O uso da Historia, entre outras areas do saber, tem ajudado a compreender esse processo. Para descobrir como isso se deu no caso do Brasil, iniciou-se uma busca em um periodo anterior ao das grandes navegacoes, ja que os portugueses, principais colonizadores do Brasil, ja traziam consigo uma bagagem cultural que foi fundamental para estabelecer na colonia as bases da alimentacao. Constatou-se que a necessidade de superar as primeiras dificuldades levaram os colonizadores a adotar habitos indigenas, mas principalmente seu tipo de lavoura e seus alimentos; a substituicao dos ingredientes europeus por similares da colonia foi um segundo passo importante; o terceiro elemento a se unir foi o escravo negro, que mais tarde agregaria seus conhecimentos a cozinha das grandes fazendas, resultando em um modo alimentar original, baseado na farinha de mandioca, no milho e seus derivados, no feijao e na carne seca. Apesar de tudo, a colonia manteve uma alimentacao pobre em muitas regioes devido, entre outras coisas, ao rareamento e encarecimento de produtos vindos de Portugal, insuficiente atividade agricola de subsistencia e deficiencia no transporte de alimentos para regioes mais distantes, alem de um aumento vertiginoso da populacao, principalmente na regiao das minas. Por fim, observou-se que esse quadro alimentar, caracterizado pela penuria, improvisacao e criatividade, resultou, entre outras coisas, num cenario endemico de subnutricao, que ainda pode ser observado em muitas partes do Brasil de hoje, mas que, por outro lado, contribuiu para a formacao das tipicas e elogiadas cozinhas baiana e mineira, verdadeiras joias na cultura do pais (AU).
