The paté is a term French which means "mess", it is a crushed or chopped element of soft and / or spreadable consistency, it is possible to consume it fresh or at room temperatures. The production process involves cooking the main element, chopped or pounded with a mortar with the source of fat and flavored to then be cooled, the essential ingredients to make a pâté are: The main element is cooked such as offal, meat, fishery products, vegetables and legumes. A fat source such as butter, oil, margarine and lard. Finally, salt, spices and herbs. The most famous pâté is the one French of goose fat liver also called foie gras, is produced with the offal of animals subjected to forced fattening to obtain a larger liver and intense taste. The paté was born as a rather delicate food, certainly it is a tasty and easily preservable dish but we can not neglect the maintenance is important. The paté is at high risk of bacterial contamination due to the very fine cut of cooked meats, if it is not added in antioxidant it tends to become dark and go rancid quickly, it is good practice in case of conservation to put it under vacuum or immersed in food gelatin. The paté can be consumed fresh, thinly sliced, spread on bread and inserted in other preparations, they prefer, as an accompaniment, the full-bodied white or rosé wines, the alcohol contentis proportionate to the fatness of the dish. All meat-based pâtés are contraindicated in case of low-calorie diet aimed at slimming because of saturated fats, particularly rich, and cholesterol, are very rich in iron. In the kitchen many types can be prepared and lends itself to a thousand uses, from finger food to appetizers, they can enrich meat and fish main courses with sauces and crème. Just take the desired ingredient and blend it in a kitchen mixer or with a fork (to make it creamier you can add a little milk or a few teaspoons of cooking cream) together with the fat source and flavoring it. The vegetable pâté is certainly healthier than the meat base, as in all the due cautions of the case, it should always be consumed sparingly, it certainly has advantageous benefits in the body but do not bring the total daily requirement of elements that we need.
