Antioxidants are present naturally in virtually all food commodities, providing them with a valuable degree of protection against oxidative attack. When food commodities are subjected to processing, such natural antioxidants are often depleted, whether physically, from the nature of the process itself, or by chemical degradation. In conse quence, processed food products usually keep less well than do the commodities from which they originated. Ideally, food producers would like them to keep better. This objective can often be achieved by blending natural products rich in antioxidants with processed foods, or by using well recognised antioxidants as food additives. In order to understand their action, and hence to apply antioxidants intelligently in food product formulation, some knowledge of the mechanisms by which they function is necessary. This is complex and of antioxidative may rely on one or more of several alternative forms intervention. Accordingly, the various mechanisms that may be relevant are discussed in Chapter 1, in each case including the 'intervention' mechanism. When present in, or added to, foods antioxidants are functional in very small quantities, typically, perhaps, at levels of 0·01 % or less.

Historically, black body radiation in the tungsten filament lamp was our primary industrial means for producing 'artificial' light, as it replaced gas lamps. Solid state luminescent devices for applications ranging from lamps to displays have proliferated since then, particularly owing to the develop ment of semiconductors and phosphors. Our lighting products are now mostly phosphor based and this 'cold light' is replacing an increasing fraction of tungsten filament lamps. Even light emitting diodes now chal lenge such lamps for automotive brake lights. In the area of information displays, cathode ray tube phosphors have proved themselves to be outstandingly efficient light emitters with excellent colour capability. The current push for flat panel displays is quite intense, and much confusion exists as to where development and commercialization will occur most rapidly, but with the need for colour, it is now apparent that solid state luminescence will play a primary role, as gas phase plasma displays do not conveniently permit colour at the high resolution needed today. The long term challenge to develop electroluminescent displays continues, and high performance fluorescent lamps currently illuminate liquid crystal monochrome and colour displays. The development of tri component rare earth phosphors is of particular importance.

This volume is one outcome of the 6th International Conference on Paleoceano graphy (ICP VI). The conference was held August 23-28, 1998 in Lisbon, Portugal. The meeting followed the traditional format of a small number of invited oral presentations complemented by a large number ofcontributed posters. Over 550 participants attended, representing thirty countries and nearly 450 posters were presented. The invited speakers addressed the main themes of the 5oral sessions. The session topics were: Polar-Tropical and Interhemisphere Linkages; Does the Ocean Cause, or Respond to, Abrupt Climatic Changes?; Biotic Responses to Major Paleoceanographic Changes; Past Warm Climates; and Innovations In Monitoring Ocean History. This is the first time in ICP history that the Conference Proceedings are published. The aim of the organisers with the publication of this book is two-fold: to provide a useful review of the field and to document the ideas/controversies raised during the con ference that may stimulate future work. The book reflects the initial intentions of the conference, but it is not a conven tional conference proceedings, given that the papers have been reviewed by formal exter nal referees. Each of the conference topics is introduced by a review article designed to summarize the state of the art in each theme followed by articles prepared by the invited speakers. As with most conference proceedings, each theme is covered heterogenously. Some topics have all the expected contributions, others are less well covered.
