Hospitality and hearty food are the hallmarks of the Polish dining experience. This cookbook features dozens of favorite Polish dishes showcasing a variety of flavors, preparation techniques, and ingredient selections. With titles given in both Polish and English, recipes range from cucumber salad and beet soup to pork cutlets, potato pancakes, and cabbage rolls. A chapter devoted to pierogi presents the dumplings with an assortment of fillings, and the final chapter of sweets tops off any meal in true Polish fashion. Like all the books in Pelican's Classic Recipe Series, the entries in this collection were carefully selected to provide a cross section of memorable and authentic dishes. Organized by course, the offerings range from appetizers and salads to sides and sweets, featuring the most iconic and national of dishes--Hunter's Stew and Barszcz --alongside comfort food and a handful of desserts, including honey cake, poppy seed rolls, and chocolate mazurka. In 2013, Pelican's Polish Classic Desserts won the 2013 Gourmand World Cookbook Award for Best Eastern European Cookbook in the USA. Designed for the modern kitchen yet retaining traditional roots, each heritage recipe has been tested to perfection. Accompanied by notes on Polish holiday customs, history, and menu pairing suggestions, these dishes offer a flavorful sample of the Polish dining experience, as passed down from generation to generation.

Poland, is a country in Central Europe. The history of Polish goes back thousands of years. Throughout the late antiquity period it became extensively diverse, with various cultures and tribes settling on the vast Central European Plain. Amongst these cultures, the Polans dominated the region and therefore gave Poland its name. Because of this vast history, Polish cuisine is highly eclectic. Polish cuisine shares many similarities with other Central European cuisines, including German, Austrian, Jewish, French, Italian and Turkish. Poland is bordered by seven neighbors: Germany, Slovakia, the Czech Republic, Lithuania, Belarus, Ukraine, and Russian Kaliningrad. Polish dishes are usually rich in meat, such as pork, chicken and beef. Also included are winter vegetables (sauerkraut cabbage in bigos), and spices. It is also characteristic in its use of various kinds of noodles, the most notable of which are kluski, as well as cereals such as kasha (from the Polish word kasza) and a variety of breads like the very popular bagel. Polish cuisine is hearty and uses a lot of cream and eggs. Festive meals such as the meatless Christmas Eve dinner (Wigilia) or Easter breakfast could take days to prepare in their entirety. A Polish main course usually includes a serving of meat, such as roast, chicken, or kotlet schabowy (breaded pork cutlet), vegetables, side dishes and salads, including surówka – shredded root vegetables with lemon and sugar (carrot, celeriac, seared beetroot) or sauerkraut. The side dishes are usually potatoes, rice or cereal. Meals conclude with a dessert such as sernik (cheesecake), makowiec (poppy seed pastry), or napoleonka (cream pie). Some of the Polish national dishes include bigos, pierogi, kielbasa, kotlet schabowy (breaded cutlet); gołąbki (cabbage rolls); zrazy (roulade); pieczeń (roast); sour cucumber soup; mushroom soup; zupa pomidorowa tomato soup; rosół (a variety of meat broth); żurek (sour rye soup); flaki (tripe soup); barszcz and chłodnik. This cookbook contains some of the best loved recipes from Poland.

Wild Honey And Rye written by Ren Behan and has been published by Interlink Books this book supported file pdf, txt, epub, kindle and other format this book has been release on 2018-03 with Cooking categories.

In this refreshing approach to Polish cuisine, food writer and blogger Ren Behan takes us on a journey to discover the new tastes of her beloved culinary heritage. The food of Eastern Europe, long misunderstood in the West, is changing?the focus is swinging away from heavy dumplings and stews towards lighter, healthier, fresh and seasonal recipes, served in contemporary ways. In this beautiful collection of recipes, Ren brings us the very best of the Polish kitchen, inspired both by the food of her childhood and by the new wave of flavors to be found in the trendy restaurants, cafes and farmers markets of modern Poland. Alternative grains, such as rye, spelt, buckwheat and millet make an appearance in risottos, as do fresh fruit preserves and pickles, infused honeys, seasonal and raw salads, light broths, delicious cakes and flavored liqueurs. No book on Polish food would be complete without pierogi, the classic dumplings, and of course they are here, with other substantial dishes such as meatballs, goulash and cutlets, as you might expect, but you will also see them in a new light?filled with strawberries and served with honey and pistachios. Pink sauerkraut adorns vegan pastry rolls, ribs are slowly-braised with honey and vodka, a fresh cucumber salad with sour cream and dill sets off a homely dish of meatballs, and Polish charcuterie sits atop the darkest rye bread. An evocative and inspiring collection of recipes, which truly celebrates all the good things the food of Poland has to offer, and which will leave your mouth watering.
