Mehrere Studien und Experten prognostizieren das Bevorstehen einer Verschiebung des LEHs vom stationären zum digitalen Handel in Deutschland. Lediglich über das Ausmaß des Wandels sowie über dessen Eintrittszeitpunkt wird rege diskutiert. Darüber hinaus werden immer mehr Konzepte entwickelt, Lebensmittel erfolgreich über das Internet zu vertreiben. Ein erfolgreiches Konzept zur digitalen Vermarktung von Lebensmitteln in Deutschland könnte das sogenannte Abonnement-Konzept darstellen. Es findet eine Spezialisierung auf das erwähnte Konzept statt. Dabei soll besonders auf den Aspekt der Bestellwahrscheinlichkeit eingegangen werden. In diesem Zusammenhang lautet die zu untersuchende Forschungsfrage „Welche Kriterien beeinflussen die (wiederkehrende) Bestellwahrscheinlichkeit bei Abonnement-Anbietern im Online-Lebensmittelhandel in Deutschland?“. Ferner soll die aufgestellte Hypothese, „Endverbraucher geben für einen Lebensmittelwarenkorb mehr Geld aus, wenn er ihnen im Rahmen eines Abonnement- Konzepts verkauft wird“, überprüft werden. Zu Beginn wird der Status Quo des Online- Lebensmittelhandels in Deutschland dargestellt. Ein weiteres Kapitel widmet sich den aktuellen Herausforderungen innerhalb der Branche. Hierzu zählen neben allgemeinen Herausforderungen, wie die onlinebasierte Vermarktung von Obst und Gemüse, auch die Logistikabwicklung und die Einhaltung gesetzlicher Rahmenbedingungen. Ferner wird ein umfassender Eindruck der unterschiedlichen Ausprägungen des Online-Lebensmittelhandels vermittelt. Dazu zählen differenzierte Online-Supermärkte (wie Rewe-Online, Allyouneed Fresh und Gourmondo), (Mass-)Customization-Anbieter (wie Mymuesli und Chocri) sowie die im Fokus stehenden Abonnementdienstleister (wie HelloFresh, Kochabo und Kochzauber). Im Anschluss erfolgt eine dreistufige Analyse der vorgestellten Abonnement-Anbieter. In der ersten Stufe findet eine Bekanntheitsgradmessung (unter anderem auf Basis einer onlinebasierten Umfrage) statt. Die Untersuchung der Kaufentscheidung ist Hauptbestandteil des zweiten Unterpunkts. Abrundend findet eine Analyse der – bei den Anbietern aufgegebenen – Testbestellungen statt.
