Excerpt from The Poultry Keeper, Vol. 46: The Journal for Everyone Interested in Making Poultry Pay; April 1929 Wheat as a single food comes the nearest to supplying the principle nu 'trients in the correct proportion to meet the needs of poultry. It would be incorrect to say that it is'an ideal food, because different varieties and grades vary in color, plumpness and hardness. The hard and dark colored wheats are supposed to be richest in protein, and therefore most valuable as food for poultry. Whole wheat has long been considered an essential in high grade scratch feeds. Poultry does not appear to tire of it, and the results from its use are always most satisfactory. Middling's is a by-product of wheat and is usually a coarse flour and fine bran. It may vary in proportions in different lots or in different mills. In some sections shorts is another term given to this product. Having -a great deal of food value, this product finds a most useful place in many dry mash es. The proportion must be determined by the actual contents. Being rather finely ground, it mixes well with the other ingredients. Bran is the outside covering of the wheat and is rather coarse. It is _much lower in feeding value than middlings but it has a decided effect upon the digestive organs and prove most use ful in promoting proper elimination. Many home mixed mashes can be great ly improved by the addition of bran. It adds bulk, an essential requirement of any first class mash. In some cases where a moist mash is used, the use of red dog flour will greatly help the consistency of the mash. This is merely a flour which is not suitable for bread making.
