This is a print on demand edition of a hard to find publication. An increase in the price of fruits and vegetables relative to less healthy foods could reduce consumers¿ incentives to purchase fruits and vegetables and result in less healthy diets. Whether such a change in relative prices and incentives has occurred in the U.S. is difficult to prove because of quality improvements in many fresh fruits and vegetables. For commonly consumed fresh fruits and vegetables for which quality has remained fairly constant, analysis of price trends reveals a price decline similar to that of dessert and snack foods. This price trend evidence suggests that the price of a healthy diet has not changed relative to an unhealthy one, although a healthy diet might not include every fresh fruit or vegetable currently available. Although healthy foods can be affordable, if less healthy foods are cheaper, individuals may have an economic incentive to consume a less healthful diet. Using the Quarterly Food-at-Home Price Database, the authors explore whether a select set of healthy foods (whole grains, dark green vegetables, orange vegetables, whole fruit, skim and 1% milk, fruit juice, and bottled water) are more expensive than less healthy alternatives. They find that not all healthy foods are more expensive than less healthy alternatives. They also find considerable geographic variation in the relative price of healthy foods. This price variation may contribute to geographic variation in diet and health outcomes. Charts and tables. This is a print on demand report.

Fed. dietary guidance advises Amer. to consume more fruits and vegetables (F&V) because most Amer. do not consume the recommended quantities or variety. Food prices, along with taste, convenience, income, and awareness of the link between diet and health, shape food choices. The authors estimate the avg. price of a pound and an edible cup equivalent of 153 commonly consumed fresh and processed F&V. They found that avg. prices ranged from less than 20 cents to more than $2 per edible cup equivalent. An adult on a 2,000-calorie diet could satisfy recommend. for F&V consumption in the 2010 Dietary Guidelines for Amer. at an avg. price of $2 to $2.50 per day, or approx. 50 cents per edible cup equivalent. One factor that may be important in explaining rising childhood obesity is food prices. This report explores the effect of food prices on children's Body Mass Index (BMI) using data from the Early Childhood Longitudinal Study, Kindergarten Class of 1998-99 (ECLS-K) and the Quarterly Food-at-Home Price Database. On average, higher prices for soda, 100 percent juices, starchy vegetables, and sweet snacks are associated with lower BMIs among children. In addition, lower prices for dark green vegetables and lowfat milk are associated with reduced BMI. The effect of subsidizing healthy food may be just as large as raising prices of less healthy foods. Charts and tables. This is a print on demand edition of an important, hard-to-find report.

A bold, science-based corrective to the groundswell of misinformation about food and how it's produced, examining in detail local and organic food, food companies, nutrition labeling, ethical treatment of animals, environmental impact, and every other aspect from farm to table Consumers want to know more about their food--including the farm from which it came, the chemicals used in its production, its nutritional value, how the animals were treated, and the costs to the environment. They are being told that buying organic foods, unprocessed and sourced from small local farms, is the most healthful and sustainable option. Now, Robert Paarlberg reviews the evidence and finds abundant reason to disagree. He delineates the ways in which global food markets have in fact improved our diet, and how "industrial" farming has recently turned green, thanks to GPS-guided precision methods that cut energy use and chemical pollution. He makes clear that America's serious obesity crisis does not come from farms, or from food deserts, but instead from "food swamps" created by food companies, retailers, and restaurant chains. And he explains how, though animal welfare is lagging behind, progress can be made through continued advocacy, more progressive regulations, and perhaps plant-based imitation meat. He finds solutions that can make sense for farmers and consumers alike and provides a road map through the rapidly changing worlds of food and farming, laying out a practical path to bring the two together.
