Gut microbiota adalah komunitas kompleks dari mikroorganisme yang hidup pada saluran pencernaan, khususnya pada usus besar (kolon), dicirikan dengan densitas populasi melebihi 1.000 spesies.Gut microbiota melakukan interaksi baik antarsel mikroorganisme maupun antarsel mikroorganisme dengan tubuh yang sangat kompleks, dan saling menguntungkan. Pada kondisi normal atau saat terjadi keseimbangan gut microbiota, ada banyak manfaat kesehatan yang diberikan, yaitu sebagai penghasil metabolit yang bermanfaat, contohnya short chain fatty acids (SCFA). Saat ini, banyak diungkap bahwa gut microbiota dalam kondisi tidak seimbang (dysbiosis) terkait dengan berbagai jenis penyakit selain penyakit saluran pencernaan, di antaranya penyakit liver ataupun gangguan metabolisme pada tubuh. Ilmugut microbiota saat ini berkembang cepat didukung peralatan-peralatan canggih yang dapat mengungkap berbagai jenis mikroorganisme beserta genomenya yang terdapat di feses. Informasi terbaru tentang gut microbiota dan peranannya dalam mendukung kesehatan tubuh diuraikan dalam buku ini. Konsep probiotik pertama kali muncul (awal abad ke-20) sebagai makanan fermentasi yoghurt, yang menurut Metchnikoff berisi bakteri hidup yang diduga memiliki peran dalam menjaga kesehatan tubuh. This book examines the role of fermented foods on human gut health and offers a unique contribution to this rapidly growing area of study. Fermented foods have been consumed by humans for millennia. This method of food preservation provided early humans with beneficial bacteria that re-populated the gut microbiota upon consumption. However, novel methods of production and conservation of food have led to severed ties between the food that modern humans consume and the gut microbiota. As a consequence, there has been a documented increase in the prevalence of autoimmune diseases and obesity, which has been correlated to decreased diversity of gut microbes, while infectious disorders have decreased in the three past decades. With the intention of providing a thorough overview of the relationship between fermented foods, nutrition, and health, the editors have grouped the chapters into three thematic sections: food and their associated microbes, the oral microbiome, and the gut microbiome. After an introduction dedicated to the environmental microbiome, Part I provides an overview of what is currently known about the microbes associated with different foods, and compares traditional forms of food preparation with current industrial techniques in terms of the potential loss of microbial diversity. The chapters in Part 2 explore the oral microbiota as a microbial gatekeeper and main contributor to the gut microbiota. Part 3 introduces beneficial modulators of the gut microbiome starting with the establishment of a healthy gut microbiota during infancy, and continuing with the role of probiotics and prebiotics in health preservation and the imbalances of the gut microbiota. In recent years the gastrointestinal microflora has featured strongly in scientific, veterinary and medical research. As a result it has become obvious that the gut microflora is an essential component of the healthy animal. Not only is it involved in digestion of food, it is essential for the optimal resistance to disease. The first part of this book records the research that has been done on the factors affecting colonization of the gut and the effect that the flora has on the host animal. The second part discusses the way in which this basic knowledge affects the choice of organism being used as a probiotic. The evidence for the involvement of the gut microflora in the health and well-being of the animal is incontrovertible, but the development of probiotics has been largely empirical, failing to capitalize on the relevant research data. The bringing together of the basic information on gut microecology and the development of probiotic preparations is long overdue. It is hoped that this exercise will result in a more scientific approach to probiotic development and the emergence of new and improved preparations for animals and man.
