Ghanaians enjoy a rather simple, but flavorful cuisine. The majority of meals consist of thick, well-seasoned stews, usually accompanied by such staple foods as rice or boiled yams. Stews come in a variety of flavors, the most popular being okra, fish, bean leaf (or other greens), forowe (a fishy tomato stew), plava sauce (spinach stew with either fish or chicken), and groundnut (peanut), one of the country's national dishes.Many spices are used to prepare stews and other popular dishes. Cayenne, allspice, curry, ginger, garlic, onions, and chili peppers are the most widely used seasonings. Onions and chili peppers (along with tomatoes, palm nuts, and broth) help to make up the basis for most stews.Certain foods that make up the Ghanaian diet vary according to which region of the country people live in. In the north, millet (a type of grain), yams, and corn are eaten most frequently, while the south and west enjoy plantains (similar to bananas), cassava, and cocoyams (a root vegetable).The people of the dry southeastern region eat mostly corn and cassava. Rice is a staple throughout most of the country. Jollof rice, a spicy dish that includes tomato sauce and meat, is enjoyed by most of the population. Pito, a fermented beverage made from sorghum (a type of grain), is a popular drink in the north, while those living in the south prefer palm wine.

The 1st edition of the book was a great success and it's been out of print for over 10 years, which has created an overwhelming demand for the revised edition. The second edition has easier to read and easy to follow cooking instructions, and updated with professional quality images of some favourite Ghanaian dishes. The book begins with a brief introduction into the history, traditions and culture of Ghana and her people. Ghanaians are fun-loving, cheerful people who are proud of their country and its numerous languages (over 20 major ones and many more dialects), traditions, and standing. The book then goes into the various traditional soups such as the famous groundnut or peanut soup, palm soup. There are stews like kontomereh (spinach) and egusi, okro or okra stew and rice dishes like jollof and kelewele (fried plantains) - delicious. There's also a section for deserts like bofloat. Towards the end of the book, there is a section which gives a list of many Ghanaian festivals and their respective dates of celebration. There is also the Adinkra symbols and the meanings of each symbols. In writing this book, the authors have endeavoured (as much as possible) to stick closely to ingredients and herbs used by Ghanaians in cooking their mouth - watering dishes. But, being conscious that this book will be read by non- Ghanaians and that food preservation will take place throughout the four corners of the globe, the authors have also included, where possible, substitute ingredients which are more readily available in American or European markets. It should be noted that because the African continent is so diverse in culture and traditions there is consequently a wide range of food and different methods and styles of cooking a similar food from one country to the next within Africa. Even within the same country, different ethnic groups will prepare the same dish differently. The term 'African food' is therefore a complete misnomer. Traditionally in Ghana, and indeed in the rest of Africa, girls learn to cook at an early age. A young adult will first go to the local market with the mother to watch how she selects the best of the fresh ingredients for a particular dish, then the child will help with little chores and take instructions from the mother in the kitchen while she cooks. By her mid-teens the child (usually a daughter, but not exclusively so) is a budding good cook herself. This is how mouth-watering Ghanaian foods are passed on from mother to daughter, from one generation to the next, intact and undiluted.

The Ghana Africa Research in Sustainable Intensification for the Next Generation (Africa RISING) Baseline Evaluation Survey (GARBES) survey was implemented from May to July 2014 as part of IFPRI’s Monitoring and Evaluation (M&E) of Africa RISING. Africa RISING aims to create opportunities for smallholder farmers in Africa south of the Sahara (through action research and development partnerships) by sustainably intensifying their farming systems and improving food, nutrition, and income security. Initiated in 2012, the program is supported by the United States Agency for International Development (USAID) as part of the U.S. government’s Feed the Future (FTF) initiative. The International Institute of Tropical Agriculture (IITA) leads a sustainable intensification effort focusing on the cereal-based farming systems in the Guinea Savannah Zone of West Africa (Ghana and Mali) and East and Southern Africa (Malawi, Tanzania, and Zambia) while the International Livestock Research Institute (ILRI) leads the research activities focusing on the crop-livestock systems of the Ethiopian highlands. The International Food Policy Research Institute (IFPRI) has been tasked with M&E of the three projects. Ghana Africa RISING is being implemented in Northern, Upper East, and Upper West regions of Ghana, within the FTF Zones of Influence. The research activities are led by IITA and Wageningen University (WUR). GARBES collected detailed household- and plot-crop level data addressing various topics: employment (agricultural and non-agricultural); health; agricultural land; crop inputs, harvest, storage, and sale; livestock ownership, feed, and water; agriculture-related challenges and coping strategies; credit and off-farm income sources; housing condition and ownership of various durable assets; subjective welfare and food security; household-level food consumption; non-food expenditure; agricultural shocks; and child and women anthropometry. The community survey collected data on access to basic services; extension services; social organizations, mobility, and village-level shocks; access to natural resources; metric conversion units; and prices of crops and food items. GARBES covered 1,284 households and 50 communities drawn from the three project regions. Data were collected using structured questionnaires in multiple local languages through Computer Assisted Personal Interviewing (using SurveyCTO).
