More Than Moonshine written by Sidney Saylor Farr and has been published by University of Pittsburgh Press this book supported file pdf, txt, epub, kindle and other format this book has been release on 2014-08-27 with Cooking categories.

Sydney Saylor Farr is a woman who knows Appalachia well. Born on Stoney Fork in southeastern Kentucky, she has lived much of her life close to the mountains, among people whose roots are deep in the soil and who pass on to their children a love for the land, a strong sense of belonging and of place.Mountain food and how it is cooked is very much a part of this sense of place. Ask any displaced Appalachians what they miss most and they will probably talk about soup beans, country ham, and homemade buscuits. They may also remember the kitchens at home, the warmth from the wood-burning stove, the smell of coffee, and the family gathered around the kitchen table to eat and talk.More than Moonshine is both a cookbook and a narrative that recounts the way of life of southern Appalachia from the 1940s to 1983. The women of Stoney Fork rarely had cash to spend, so they depended upon the free products of nature - their cookery used every nutritious, edible thing they could scour from the gardens and hillsides. These survival skills are recounted in the pages of More than Moonshine, with instructions for making moonshine whiskey, for fixing baked groundhog with sweet potatoes, for making turnip kraut, craklin' bread, egg pie, apple stackcake, and other traditional dishes.More than Moonshine is more than a cookbook. It evokes a way of life in the mid-twentieth century not unlike that of pioneer days.

Always Eat The Hard Crust Of The Bread written by David Mazzarella and has been published by iUniverse this book supported file pdf, txt, epub, kindle and other format this book has been release on 2012-06 with Biography & Autobiography categories.

Benigna Preziosi Mazzarella led a life that seemed the epitome of ordinariness, except that it also embodied a perfect storm for longevity: amazing genes, adherence to a Mediterranean diet, and almost compulsive physical activity. Benigna imbued her days with an energy all her own. Even more remarkable, she lived to be over one hundred and seven years old. David Mazzarella, a journalist and the son of Benigna, shares a cooking, eating, and lifestyle guide based on his mother's philosophies that a lifetime of hard work was not bad, that laughter was even better, and that the only enemy in her life was fat. Known as a wizard in the kitchen, Benigna possessed uncharacteristic dislikes for a lady who exclusively cooked Italian food-she had little use for garlic, oregano, unpeeled tomatoes, wine, and the insides of bread. Mazzarella offers a glimpse into a typical day in his mother's kitchen along with the recipes of her most sought-after dishes, including one made with a mysterious herb. Always Eat the Hard Crust of the Bread shares a wonderful tribute to a tough matriarch and inspiring cook through entertaining anecdotes, personal foibles, unforgettable sayings, and practical recipes that share one woman's secret of how to live a long and happy life. "A delightful tribute to a long-lived mother and some quirky family members with dozens of Mama's unique recipes, including one made with an obscure herb that few know how to use." -Gwen Romagnoli, co-author of Italy the Romagnoli Way: A Culinary Journey

Nothing Fancy written by Diana Kennedy and has been published by University of Texas Press this book supported file pdf, txt, epub, kindle and other format this book has been release on 2016-04-19 with Cooking categories.

Diana Kennedy is the world’s preeminent authority on authentic Mexican cooking and one of its best-known food writers. Renowned for her uncompromising insistence on using the correct local ingredients and preparation techniques, she has taught generations of cooks how to prepare traditional dishes from the villages of Mexico, and in doing so, has documented and helped preserve the country’s amazingly diverse and rich foodways. Kennedy’s own meals for guests are often Mexican, but she also indulges herself and close friends with the nostalgic foods in Nothing Fancy. This acclaimed cookbook—now expanded with new and revised recipes, additional commentary, photos, and reminiscences—reveals Kennedy’s passion for simpler, soul-satisfying food, from the favorite dishes of her British childhood (including a technique for making clotted cream that actually works) to rare recipes from Ukraine, Norway, France, and other outposts. In her inimitable style, Kennedy discusses her addictions—everything from good butter, cream, and lard to cold-smoked salmon, Seville orange marmalade, black truffle shavings, escamoles (ant eggs), and proper croissants—as well as her bêtes noires—kosher salt, nonfat dairy products, cassia “cinnamon,” botoxed turkeys, and nonstick pans and baking sprays, among them. And look out for the ire she unleashes on “cookbookese,” genetically modified foods, plastic, and unecological kitchen practices! The culminating work of an illustrious career, Nothing Fancy is an irreplaceable opportunity to spend time in the kitchen with Diana Kennedy, listening to the stories she has collected and making the food she has loved over a long lifetime of cooking.

It wasn't until I was a student at the Culinary Institute of America in the late 1970s that I first realized that growing up as a first generation Italian-American family in the Bronx and New Jersey wasn't as typical as I had thought. My parents and their parents were all born and raised in Italy. Throughout my youth and beyond, my father and mother referred to their five children, four boys and a girl, by the number in the order of which we were born. To this day, my mother still occasionally refers to me as "Number Two Son." But when it came to hanging around the kitchen, I was definitely the number one pest. I was the little punk kid always by my mother's side as she was cooking or baking. I would jockey for position wherever my mother moved, stand on a kitchen chair up against the stove, and otherwise constantly be in her way as I tried to get a better look at whatever was being done. Same when either of the grandmothers - Nona Lisa or Grandma Melfi - or other relatives were there. Maybe it was something in the water around Pisa, but I suspect it's a genetic condition. For my mother, her mother, cousins, aunts and countless generations before them in this food-fueled blood line, the world revolved around the kitchen and dining room table. Life was not good unless family, friends, or anyone close to the dinner table was fed to excess, ritually seduced with course after course of delicious, abundant and temptingly presented food. This attitude seemed to pervade all branches of the family, but my inspiration and mentor was Maria Gracia Melfi, aka Mama Melfi, aka The Food Pusher.
