Guild of Food Writer’s Awards, Highly Commended in ‘General Cookbook’ category (2021) Root, Stem, Leaf, Flower is a cookbook about plants – it's about making the most of the land's bounty in your everyday cooking. Making small changes to the way we cook and eat can both lessen the impact we have on the environment and dramatically improve our health and wellbeing: good for us and for future generations to come. Making plants and vegetables the focus of your meals can improve your cooking exponentially - they provide a feast of flavours, colours and textures. Root, Stem, Leaf, Flower is a true celebration of seasonal vegetables and fruit, packed with simple and surprisingly quick vegetarian recipes. With roots, we think of the crunch of carrots, celeriac, beetroot. From springtime stems like our beloved asparagus and rhubarb, through leaves of every hue (kale, radicchio, chard), when the blossoms become the fruits of autumn – apples, pears, plums – the food year is marked by growth, ripening and harvest. With 120 original recipes, every dish captured by acclaimed photographer Andrew Montgomery, and Gill's ideas for using the very best fresh ingredients, Root, Stem, Leaf, Flower is a thoughtful, inspiring collection of recipes that you'll want to come back to again and again. Praise for Time: "I love Gill Meller's food: it is completely his own, and ranges from the (unpretentiously) rarified to the smile-inducingly cosy; indeed, he often seems to fuse the two... his recipes make me want to run headlong into the kitchen." – Nigella Lawson "Gill Meller's latest cookbook, Time, is poetic and romantic – a string of beautiful recipes guide you through the seasons. – Yotam Ottolenghi, Guardian Praise for Gather: "My book of the autumn and possibly of the year... Gather is a perfect expression of something food writers have been trying to define for the past three decades: modern British cooking." – Diana Henry "Just stunning. There's no one I'd rather cook for me than Gill and there's not a recipe here I wouldn't eagerly devour." – Hugh Fearnley-Whittingstall

Excerpt from The Culture of Vegetables and Flowers From Seeds and Roots When Parkinson directed his readers to prepare Melons for eating by mixing with the pulp 'salt and pepper and good store of Wine, he must have been familiar with fruit differing Widely from the superb varieties which are now in favour. A kindred plant, the Cucumber, is more prolific than ever, and the fruits Win admiration for their symmetrical form. The Tomato has ceased to be a summer luxury for a few wealthy epicures, and is now prized as a delicacy throughout the year by all classes of the community. Apart from its edible value, the fruit has been developed into many beautiful forms, and it can be employed with brilliant effect as a table ornament. As a result of the hybridiser's skill modern Potatoes produce heavier crops, less liable to succumb to the attacks Of disease, than the Old varieties, and the finest table quality has been maintained. This vegetable alone has contributed in a marked degree to the reformation Of the national dietary. Peas are not What they were because they are so immensely better: While the powers of the plant have been concentrated, with the result that it Occupies less room and occasions less trouble, its productiveness has been augmented and the quality improved. Excerpt from Buds, Stems and Roots This little book does not claim to be exhaustive, but aims at bringing the children into an attitude of appreciation of plant life, its laws of growth and the wonders of its development. A few seeds or plants brought into the school-room, and allowed to develop there, the children watching each stage of progress, will teach more than hundreds of wonderful buds and stems ruthlessly dissected by little hands already too eager to destroy. That sort of botany which consists merely of pulling a wonder ful blossom to pieces, and wasting its loveliness, that the child may count its petals and see the number written down on a blackboard, is of questionable value. Excerpt from Field and Woodland Plants The root is that portion of the plant which descends into the soil for the absorption of the mineral food required. It really serves a double purpose, for, in addition to the function just mentioned, It fixes the plant in its place, thus forming a basis of support for the stem and its appendages. Excerpt from Gardening À La Mode: Vegetables Artichokes are strong growing plants, and will grow almost in any kind Of Soil as long as it is properly prepared but, though they prefer a good rich garden Soil, the ground Should be manured and trenched in the middle of January, and the land should be broken up deeply and left with a rough surface till the end Of March, then forked over, and the suckers planted (suckers are better than seeds) early in April four feet apart. The suckers are best when about nine inches long. Good manure Should be placed between the rows Bevery autumn, and the plants covered with straw in Severe weather in the winter. TO prepare them for planting, the brown hard part by which they are attached to the parent stem must be removed, and the large outside leaves should be taken Off SO that the heart appears above them. If the weather is favourable, it is a good plan to put them into a pan Of water for a few hours before they are planted, especially if they have been separated from the parent stem for some time. A large flower-pot should be placed over each, and they should be watered liberally every evening till the flower heads appear. About June all side Shoots should be cut Off, and all the care they will require during the summer is the frequent use Of the hoe and occasionally a mulching Of liquid manure. The plants will produce a succession of heads from July to October. In the autumn cut down the stalks which have produced heads, and place a thick covering Of litter about the stems and roots to exclude frost.
