This book provides a timely and thorough snapshot into the emerging and fast evolving area of applied genomics of foodborne pathogens. Driven by the drastic advance of whole genome shot gun sequencing (WGS) technologies, genomics applications are becoming increasingly valuable and even essential in studying, surveying and controlling foodborne microbial pathogens. The vast opportunities brought by this trend are often at odds with the lack of bioinformatics know-how among food safety and public health professionals, since such expertise is not part of a typical food microbiology curriculum and skill set. Further complicating the challenge is the large and ever evolving body of bioinformatics tools that can obfuscate newcomers to this area. Although reviews, tutorials and books are not in short supply in the fields of bioinformatics and genomics, until now there has not been a comprehensive and customized source of information designed for and accessible to microbiologists interested in applying cutting-edge genomics in food safety and public health research. This book fills this void with a well-selected collection of topics, case studies, and bioinformatics tools contributed by experts at the forefront of foodborne pathogen genomics research.

The genus Salmonella comprises an important number of bacterial species able to colonize and infect numerous animal species and humans. Although more than a hundred years passed since its discovery, Salmonella still represents a redoubtable and successful microorganism, difficult to deal with. Whether we discuss about typhoid fever or food poisoning, the public health and financial consequences are practically incalculable. The costs attributable to Salmonella contamination of meat, eggs, and vegetables are also very high worldwide. Antimicrobial resistance in Salmonella isolates is an emerging threat not only in humans, and special measures should be addressed to this global problem. The book Current Topics in Salmonella and Salmonellosis contains a series of reviews about all-important issues concerning these subjects. It comprises 14 chapters grouped in 4 sections emphasizing new insights into pathogenesis, bacterial detection and antibiotic resistance, infections in animals, risk factors, and control strategies. The new genomic data and the exhaustive presentation of molecular pathogenesis bring novelty to the book and can help to improve our knowledge about Salmonella-induced diseases.

The last half century has witnessed two landmark events in medical history. The 1970s saw euphoria about the defeat of one of humankind's oldest disease scourges with the global eradication of smallpox. To set against this, the 2020s are experiencing the pandemic ravages of new viral diseases, of which COVID-19 is currently the most potent. But it is only the latest of a succession of threats. A Geography of Infection explores the distinctive spatial patterns and processes by which such infectious diseases spread from place to place and can grow from local and regional epidemics into global pandemics. This resource focuses initially on the local scale of doctors' practices and small islands where epidemic outbreaks are slight in the numbers infected and in geographical extent. Such local area studies raise two questions. First, how and where do epidemic diseases emerge and second, why do more diseases appear to be emerging now? To approach such questions implies a shift in spatial gear from painting epidemics with a fine-tipped local brush to an expanded palette on which doctors' practices and small islands are replaced by regional and global populations. Simultaneously, time bands are extended backwards to the origins of civilization and forwards into the twenty-first century. It eventually leads to a consideration of global pandemics - both historical (for example, plague, cholera and influenza) and contemporary (HIV/AIDS and COVID-19) and examines the ways the spread of infection can be prevented. All chapters are extensively illustrated with full-colour diagrams and maps - some of which are in colour for the first time. Bringing together the authors' collective 150 years of experience in research, mapping, and writing on spatial aspects of medical history, this is an invaluable resource for anyone interested in the spread, control, and eradication of epidemic and pandemic diseases.

"Non-typhoidal Salmonella spp. are estimated to cause 93.8 million cases of acute gastroenteritis and 155,000 deaths globally each year, approximately 85% of which are estimated to be foodborne, establishing Salmonella as having a significant public health and economic impact on society. Pork products are among the top food-borne sources of Salmonella globally, while beef products have been implicated in several large outbreaks in recent years. Contamination of beef and pork with Salmonella can also have a negative impact on the agri-food and trade sectors due to costly recalls of products and by limiting market access. FAO and WHO have undertaken a systematic review of the available evidence on interventions to control Salmonella in beef and pork from primary production through processing. This information was then considered by an expert meeting which provided recommendations on efficacious interventions. This report presents the outcome of those deliberations as well as the review of studies on which the discussions were based, providing the reader with a wealth of up to date information on the currently available interventions for the control of Salmonella in beef and pork."--Publisher's description.
