Abstract: To help consumers cope with the complexity of the American food supply, a handbook has been prepared for supermarket users who are susceptible to poor nutrition due to ignorance of food label ingredients. The food industry has separated the consumer from food production; this inexperience makes him unable to make nutritionally and economically sound food selections. Therefore, shoppers are encouraged to buy fresh foods and acquire knowledge of labels to dintinguish competing brands on the basis of quality and price. Food additives, packaging, processing, coporate controls, convenience foods, advertising, and supermarkets have all added to food costs. The view is expressed that the food industry assumes consumers know so little about food that they can be easily cheated. Numerous examples of food frauds inherent in brand name merchandising practices are given. Today's foods may often lack taste, quality, variety and freshness due to the demands of volume production efficiency. These consumer problems are illustrated in a case study of breakfast cereals. Each chapter suggests activities to educate the grocery shopper.
