The longer a person abstains from food and water the more prone their body becomes to turning an excessive amount of its fatty acids into ketone. Should a person's body produce too many ketone bodies for their body to handle, they will put themselves in danger of getting ketosis, which is described as a chemical imbalance that can threaten a person's life.
