This dissertation consists of three essays investigating household food purchase behaviors, focusing on modeling household binary purchase choices and expenditure decisions. The findings reveal factors that are influential on the formation of healthy and/or unhealthy dietary choices and provide insights for producers, retailers, and public health policymakers. The first essay proposes a new estimator for multivariate binary response data, a data feature of growing interest in the study of consumer behavior. This study considers binary responses as being generated from a truncated multivariate discrete distribution. The new estimator is shown to have attractive properties through Monto Carlo simulations and empirical applications. Comparisons are made to the traditional multivariate probit model. Because multivariate binary response modeling is frequently required in areas such as marketing, household behavior, crop selection, and conservation practices, among others, findings are of interest to both econometricians and practitioners. The second essay investigates the effects of demographic and socio-economic factors as well as outmigration, a special issue in Poland, on the consumption of tobacco and alcohol. This study takes advantage of second-hand survey data collected from a household panel by Poland's Main Statistical Office (GUS) that is not publicly available. Due to the addictive nature of tobacco and alcohol, this study uses a censored system to model the correlated consumption of tobacco and alcohol. Findings provide insights for the reduction and prevention of tobacco and alcohol use. The third essay provides a holistic profile of fresh produce choices and expenditures, including expenditure on fresh produce, frequency of purchase, variety of selection, and use of deals and coupons. A profile of consumers by consumer group was developed using 2014 Nielsen Homescan panel. This study intends to present a holistic picture of consumer disadvantage in terms of fresh produce consumption and take an all-inclusive approach so as to seek out commodities as well differences in fresh produce shopping behaviors across four consumer groups.

Consumers' shopping behavior connects market goods expenditure with the out-of-market time allocation in their daily time use. This study is composed of three essays. In the first essay, data are collected from the American Time Use Survey and it is found that an indvidual's time devoted to shopping is positively determined by opportunity cost of time. Grocery shopping and other shopping, as two distinct types of shopping, react differently to a series of individual and household characteristics as well as by seasons. The corresponding marginal effects also differentiate between shopping time, leisure time, and home production time. In regards to gender difference, females dominate in amount of shopping time, and males and females respond differently on change of time due to change in economic status. The second essay examines the demand for market goods as an important factor in the process of household production. The researcher analyzes food and non-food expenditures of households in the United States using the 2002 and 2003 Current Population Survey Food Security Supplements. The results reveal the relationship between earned income and food purchased for home consumption, food purchased in restaurants, and non-food grocery goods purchases. It is found that expenditure for food to be consumed at home is related positively to income, while the share of total purchase devoted to home consumption is negatively related to income. Demographic variables and socioeconomic variables are found to play important roles in expenditure determination. In the third essay, a joint examination of shopping time and shopping expenditures is performed by merging the data from the researcher's time use study and expenditure study. The results of this paper show that shopping time and goods expenditure are related positively, so that the complementarities exist between grocery shopping time and grocery expenditure for American households.

This document contains the first two chapters from my dissertation, titled Three Essays on Consumption and Geography, which use data provided by the Kilts Center for Marketing Data Center. Together they highlight the importance of accounting for geographic differences in new product entry to accurately measure real consumption using household-level spending data and a model to construct cost-of-living-adjusted price indices. The first chapter estimates real consumption's growth rate and volatility in light of three new facts documenting geographic differences in consumption: (1) consumers in separate markets buy different products, (2) a product's market share varies geographically conditional on relative price, and (3) product variety growth and its cyclicality varies geographically. These facts suggest that existing methods to account for product variety changes overstate the benefits to consumers by overlooking geographic diversity in consumption baskets. Quantitatively, focusing on aggregate product variety changes overstates real consumption growth by 2.75 percentage points primarily by assuming that local product entry benefits all consumers nationally. Nonetheless, accounting for product variety changes is important. Our real consumption series grows 3 percentage points faster than a statistical agency benchmark and has twice the volatility due to product variety's procyclicality. The second chapter examines how accounting for local product variety changes alters aggregate welfare estimates and our understanding of regional heterogeneity. Concentrating on in-home product spending from 2004-2014, aggregate quarterly consumption-equivalent welfare was 16.20 percent higher than a statistical agency benchmark indicates. However, focusing on aggregate statistics masks large geographic differences that statistical agency methods understate, implying greater real consumption growth inequality across regions than previously believed.

This dissertation consists of three essays on food consumption patterns of Japanese household using individual household level data. This dissertation is composed of three separate and self-contained chapters on two different areas: (i) reputation building and competition in on-line markets, and (ii) the heterogeneous transmission of monetary policy to household consumption expenditures and income. The first chapter investigates how sellers' strategic competition for high valuation buyers shapes reputation building incentives in a setting resembling an on-line market, and how it determines the dynamics of prices and reputation itself. Sellers repeatedly auction off a good to a pool of short-lived buyers; efforts and valuations are private information. Ceteris paribus, as the reputation of competitors increase (intensity of competition), a seller's incentive to exert effort that helps to successfully complete a transaction decrease. This "intensity" of competition effect, however, quickly disappears as the number of buyers in the market increases, providing a motivation for the use of equilibrium concepts such as "oblivious equilibrium", in which the only payoff relevant reputation is the average one. The second chapter shifts focus to household expenditure, debt and monetary policy. It is shown that, in response to an interest rate change, mortgagors (i.e. households that own a house with a mortgage) in the U.K. and U.S. adjust their spending significantly (especially on durable goods) but outright home-owners (i.e. households that own a house outright) do not. While the dollar change in mortgage payments is nearly three times larger in the U.K. than in the U.S., these magnitudes are much smaller than the overall change in expenditure. In contrast, the income change is sizable and similar across both household groups and countries. Consistent with the predictions of a simple heterogeneous agents model with credit-constrained households and multi-period fixed-rate debt contracts, our evidence suggests that the general equilibrium effect of monetary policy on income is quantitatively more important than the direct effect on cash-flows. Finally, the third chapter exploits individual mortgage data in the UK to try to further understand the role of mortgagor's balance sheets in the transmission of monetary policy. Estimation results point in the direction of significant heterogeneity in two dimensions: (i) in the response of observed leverage (loan-to-value) and affordability (loan-to-income) ratios at the time of origination for the median mortgagor, and (ii) the response of LTVs for households that are first-time-buyers and those that are non-first-time-buyers.
