Herbert Marcus, Sr., a former buyer with Dallas’ Sanger Brothers department store, had left his previous job to found a new business with his sister Carrie Marcus Neiman and her husband, A.L. Neiman, then employees of Sanger Brothers competitor A. Harris and Co. In 1907 the trio had $25,000 from the successful sales-promotion firm they had built in Atlanta, Georgia, and two potential investments into which to invest the funds. Rather than take a chance on an unknown “sugary soda pop business,” the three entrepreneurs rejected the fledgling Coca-Cola company and chose instead to return to Dallas to found a retail business. The store, established on September 10, 1907, was lavishly furnished and stocked with clothing of a quality not commonly found in Texas. Within a few weeks, the store’s initial inventory, mostly acquired on a buying trip to New York made by Carrie, was completely sold out. Oil-rich Texans, welcoming the opportunity to flaunt their wealth in more sophisticated fashion than was previously possible, flocked to the new store. In spite of the Panic of 1907 set off only a few weeks after its opening, Neiman Marcus was instantly successful, and its first several years of operation were quite profitable. Big Bend resident rancher Hallie Stillwell has added her voice and favorite chili recipe to her friend Frank X. Tolbert's classic book, A Bowl of Red. Written by the late Dallas newspaper columnist and author, A Bowl of Red is an entertaining history of the peppery cowboy cuisine. This new printing of the book is based on Tolbert's 1972 revised edition, in which he describes the founding of the World Championship Chili Cookoff, now held annually in the ghost town of Terlingua, Texas. Hallie Stillwell was one of the three judges at the first Terlingua cookoff, held in 1967. "We were blindfolded to sample the chili," the ninety-six-year-old writer/rancher says in her foreword. She voted for one of the milder concoctions; another judge cast his vote for a hotter version. The third judge, who was mayor of Terlingua, sampled each pot but then pronounced his taste buds paralyzed and declared the contest a tie. There's been a "rematch" in Terlingua every November since then. "I have never failed to attend," Stillwell says. Stillwell's recipe for lean venison chili is her favorite, one she prepared in large quantities for the hungry hands at the Stillwell Ranch in the Big Bend. This new printing of the classic also features an index to other recipes in the book, such as "Beto's prison chili" and chili verde con carne (green chili). The book also includes Tolbert's tales of searching out the best cooks of Southwestern specialties like rattlesnake "stew" and jalapeño corn bread.

In 1955, Frank X. Tolbert, a well-known columnist for the Dallas Morning News, circumnavigated Texas with his nine-year-old-son in a Willis Jeep. The column he phoned in to the newspaper about his adventures, "Tolbert's Texas," was a staple of Walt Davis's childhood. Fifty years later, Walt and his wife, Isabel, have re-explored portions of Tolbert’s trek along the boundaries of Texas. The border of Texas is longer than the Amazon River, running through ten distinct ecological zones as it outlines one of the most familiar shapes in geography. Me and Beacher rode south from my cabin in the general direction of Cairo, Illinois. I remembered Pop saying there was a horse-shoe bend in the river as it turned back north. It was still and always shallower, easy to cross and not too many tree snags, as most of them would pile up on the south side of the bend. Wagons had been crossing there for years and it was a lot safer than other places. Beacher had a compass he had gotten for his birthday one time. Heck, the only thing I ever got for a birthday was a good swift kick in the back-side from one of my older brothers.

Amada Cardenas, a Mexican American woman from the borderlands of South Texas, played a pivotal role in the little-known history of the peyote trade. She and her husband were the first federally licensed peyote dealers. They began harvesting and selling the sacramental plant to followers of the Native American Church (NAC) in the 1930s, and after her husband’s death in the late 1960s Mrs. Cardenas continued to befriend and help generations of NAC members until her death in 2005, just short of her 101st birthday. Author Stacy B. Schaefer, a close friend of Amada, spent thirteen years doing fieldwork with this remarkable woman. Her book weaves together the geography, biology, history, cultures, and religions that created the unique life of Mrs. Cardenas and the people she knew. Schaefer includes their words to help tell the story of how Mexican Americans, Tejanos, gringos, Native Americans, and others were touched and inspired by Amada Cardenas’s embodiment of the core NAC values: faith, hope, love, and charity.
